Tomorrow is Cinco de May and these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs are a great way to kick off the celebrations! The idea here is that you take some cooked potatoes and smash them down into pancake like discs, brush them with oil and bake them until the are nice and golden brown, crispy and all sorts of good! I give them a "Mexican" kick by topping them with plenty of melted cheddar cheese, guacamole, crispy bacon, a fried egg with a runny yolk and finally a fresh tomato salsa, aka pico de gallo! There are just so many amazing flavours going on in these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs which are great for breakfast lunch or dinner!

Huevos rancheros, or ranch style eggs, are a great way to use up leftover tortillas, refried beans and salsa, or as the case is more often for me, the perfect excuse to make some. Huevos rancheros typically consist of crispy fried tortillas topped with refried beans, salsa ranchera and a nice fried egg with a runny egg yolk! If you are using all homemade ingredients then huevos rancheros are a pretty healthy breakfast in addition to being tasty, fulfilling and easy to make! You can of course jazz things up a bit by adding extras like avocado, sour cream, cheese, etc. No matter how you serve them, these huevos rancheros are a great way to start off your Cinco de Mayo celebrations, or any day for that matter!

While planning your St Patrick's Day menu don't forget about breakfast! Start St Patrick's Day off right with some boxty, an Irish style potato pancakes! Boxty is great all by itself, I mean what's not to love about potato pancakes that are fried until golden brown and crispy on the outside and soft and warm on the inside, but why not suff them full of some thing tasty like sausage and a guinness mushroom and onion gravy? The pancakes themselves are super easy to make, consisting of shredded potato, mashed potatoes, flour and milk (I like to add cheese!) that is mixed and then cooked just like any other pancake! The gravy is also pretty easy to make where you simply saute some onions and mushrooms, add Guinness, dijon mustard and Worcestershire sauce to make the gravy and you're good to go! This would be a great dinner or breakfast and since I'm thinking breakfast I would be remiss if I did not top it with a fried egg with a runny yolk! I don't know about you but I can't think of a better way to start St Patrick's Day than with these boxty stuffed with bangers in a guinness mushroom and onion gravy!

Are you looking for a snack for game day or an appetizer for a New Year's Eve party or just something for a get-together? These tasty ham and cheese rolls with caramelized pineapple and onions are perfect; nice and quick and easy and oh so good! I came across the idea for hot ham and cheese party rolls a while ago and the holidays was a great time to pull out the recipe. They are super easy to make, you just roll out a dough, lay down some slices of ham and cheese along with caramelized onions and pineapple, roll them up, pour on a tasty sauce and bake them until they are fabulously golden brown and flaky and good! The original recipe calls for a pizza dough but I went with a crescent dough and I added the caramelized onions and pineapple to add a touch of sweetness and tanginess that compliments the ham and cheese combo really well. These ham and cheese rolls with caramelized pineapple and onions are the perfect finger food for any party!

With all of the hustle and bustle of the holidays I try to make sure that I don't forget about breakfast and these peppermint candy cane and white chocolate chip scones are the perfect breakfast for the holidays! Scones are super easy to make, especially with a food processor, you simply mix all of the dry ingredients, add the chilled butter and process until it forms small grains (or cut in the butter by hand), gently mix in the wet ingredients, form the dough into the shape that you want and then bake it. The key to good scones is to not over mix once you add the wet ingredients to the dry ingredients. For these scones you add festive crushed peppermint candy canes and white chocolate chips and the aroma as they are baking is absolutely divine! The peppermint candy cane pieces and white chocolate chips in the light and fluffy scones is simply amazing! These peppermint candy cane and white chocolate chip scones are a complete pleasure for any holiday breakfast!

The other day I was thinking about ideas for snacking over the holidays and somehow I arrived at the idea for this caramel apple crumble cheesecake dip. I guess I was thinking of seasonal dishes like apple crumble and somehow that led to the idea of an apple crumble dip. Most of my favourite dips involve plenty of cheese so I could not help but think about how to incorporate some and at once it seemed obvious, a creamcheese cheesecake layer! I started out with a simple no-bake style cheesecake with cream cheese and instead of whipped cream I went with greek yogurt and I used caramel sauce as the sweetener. Next up was the apple layer which is simply some diced apples that are cooked until just tender and then smothered in caramel sauce along with a hint of cinnamon and nutmeg. The crumble layer is pretty easy, consisting of the usual suspects, butter, sugar, flour and cinnamon and once you get that all mixed up you bake it until lightly golden brown and crispy. So the final dish is a caramel apple sauce on top of a creamcheese/cheesecake layer that is served with cracker as a dip but you could also just eat it by the spoonful!

With Thanksgiving approaching I have been thinking about some new recipe ideas and I always like to take some time on the holiday to do a special breakfast! What's more, it's fun to use seasonal ingredients like apples and this apple cinnamon spiral bread with caramel cream cheese frosting has been running around my mind for a while now. This recipe starts out with my favourite sweet yeast dough recipe, that I use to make cinnamon buns and sticky buns, and instead of using it to make buns or rolls I use it to make one really large bun or a spiral bread that is stuffed with slices of apples. Since apples and cinnamon go well together I kept the cinnamon bun layer of cinnamon sugar in each spiral in addition to the apple slices. I enjoy cinnamon buns topped with a nice cream cheese based frosting and since apples and caramel are such a natural flavour combination I topped this apple cinnamon spiral bread with a caramel cream cheese frosting! No matter how you slice it this cinnamon spiral bread with caramel cream cheese frosting is one amazingly good combination of flavours that is perfect for breakfast this Thanksgiving!

It's time for another quick and easy chicken dinner, chicken enchilada chilaquiles! Chilaquiles is a Mexican dish where tortillas are fried until golden brown and crispy before being tossed in salsa and cooked until they start to soften and optionally topped with things like cheese and crema. I like to kick chilaquiles up a notch, making them even more hearty, with the flavours of chicken enchiladas, starting with an enchilada sauce, as the salsa, to which I add shredded chicken, corn and black beans. From there I top the chicken enchilada chilaquiles with onions, cheese, crema, avocado, cilantro and even a fried egg! Of course you can top these chicken enchilada chilaquiles with your favourite chicken enchilada toppings and I won't tell anyone if you enjoy them for breakfast, dinner or even a late night snack!

I certainly have been enjoying zucchini season and up next I have a Greek flavour inspired zucchini and feta breakfast casserole! I always enjoy a tasty savoury breakfast over a sweet one and it's nice to be able to sneak pack some seasonal veggies into it. This breakfast casserole has a base of eggs and cottage cheese and it's filled out with shredded zucchini and feta cheese along with plenty of fresh herbs including dill, parsley and green onions. In addition to being packed full of flavour this casserole is light, healthy and easy to make, taking less than 30 minutes. If you want to save a bit of time in the morning feel free to mix the ingredients the night before so you just need to bake in the morning. The leftovers are also great reheated so make a large batch for quick breakfasts all week long! This zucchini and feta breakfast casserole is a great way to enjoy some of the fresh summer zucchini!

Are you lucky enough to still have some leftover ham from Easter? (Or do you have some bacon on hand?) These ham and egg breakfast quesadillas are a great way to enjoy it in a tasty breakfast that is easy to make and comes together in a matter of minutes! It is so easy to add some leftover ham into scrambled eggs for a tasty breakfast but why not try doing something new and fun like quesadillas? You could throw pretty much anything that you want into these quesadillas and since I like mine spicy I tend go with salsa and jalapenos along with the ham, eggs and cheese. After a few days of these amazing ham and egg breakfast quesadillas I will be sad to see the rest of the leftover ham disappear!

If you are lucky enough to still have any leftover corned beef, I have one more tasty way for you to enjoy it; in a reuben style corned beef and cauliflower hash. This hash has all of the flavours of a reuben sandwich including the corned beef, sauerkraut, melted swiss cheese, russian dressing and caraway seeds for the dark rye bread flavour. This dish could of course be done with the more common potatoes but I wanted to lighten it up a bit and went with cauliflower this time as it does amazingly well in hash! This might just be one of the easiest and tastiest ways to enjoy some leftover corned beef for breakfast!

With a bit of luck, or planning, after your St Patrick's Day dinner you will have some leftover corned beef to use in a new dish or two and this reuben quiche is definitely a tasty place to start. For this quiche I wanted to include all of the flavours of a reuben sandwich in quiche form for breakfast. The quiche itself is rather easy coming together with the standard eggs and cream along with some swiss cheese and it is filled it out with the leftover corned beef, some sauerkraut and a touch of russian or thousand island dressing. The only thing that is missing was the rye bread that a reuben sandwich is normally made with and I include it by making the quiches crust out of rye breadcrumbs held together with a touch of butter and some more swiss cheese that I pre-bake to ensure that it is nice and crisp. I have to say that this is one truly amazing way to do breakfast the day after St Patrick's Day!

Corned Beef Hash

Another classic way to use some leftover corned beef is in hash which at its base is a mixture of cooked corned beef, potatoes and onions and it is fried up for breakfast. This is a pretty easy recipe where you simply take some sauteed onions, add the corned beef along with cooked potatoes and fry it all up. The key to a good hash is the frying; you want to pack the hash down in the frying pan and let it fry until it is a nice deep golden brown and caramelized and then flip it and repeat. Although this dish is pretty simple, it is full of flavour because of that caramelization and it is pure comfort food that is great for breakfast the day after St Patrick's Day. When I made my corned beef dinner the other night I made sure to throw in enough potatoes that there would be some leftover for the hash the next morning and with the cooked corned beef and cooked potatoes ready this dish is really easy to make taking almost no time at all. Of course pretty much everything is better topped with a fried egg with a runny yolk!

One of the best things about St Patrick's Day has to be all of the leftover corned beefand although the reuben sandwichis my favourite way to enjoy those leftovers, it is sometimes difficult to wait until lunch to make a reuben sandwich! This year I thought that it would be nice to push it up a bit and have a reuben for breakfast in the form of a breakfast sandwich in an english muffin with a fried egg! This breakfast reuben sandwich has all of the flavours of a regular reuben sandwich with the corned beef, swiss cheese, sauerkraut and russian or thousand island dressing but it is served in an english muffin with a fried egg. The only thing that is missing really is the lack of rye bread and if you feel up to it you could make your own rye english muffins but I took an easier route and simply added one of the primary flavours of a rye bread, the caraway seeds, to the breakfast sandwich. This sandwich certainly is one tasty breakfast treat and a perfect way to get a start to the day after St Patrick's Day!

This year St Patrick's Day is on a Sunday and that means cutting back on the amount of Irish ales, stouts and whiskies in the evening but it also provides the opportunity to do some more cooking in the spirit of the day, starting with breakfast! Guinness and chocolate are a perfect match and I was thinking that some Guinness chocolate pancakes would be a great way to kick off St Patrick's day! For the recipe, I pretty much took my standard chocolate pancake recipe and replaced the milk with Guinness. I made the pancakes small so that I could make a nice stack of them as if they were Guinness in a glass and I topped them off with a frothy head of whipped cream. Instead of using regular pancake syrup or even maple syrup I decided to kick up the chocolate and Guinness flavours with a Guinness and chocolate syrup! You know me too well; I could not stop there, I just had to add some crumbled bacon to the pancake batter to give the chocolate pancakes a saltiness to play off of their sweetness. (The bacon is of course completely optional and should be omitted for the vegetarian version.) You are sure to get your St Patrick's Day celebrations off to a good start with these totally amazing bacon Guinness chocolate pancakes with a frothy whipped cream head and Guinness chocolate syrup!

While I was looking into queso fundido for my chorizo queso fundido I came across an idea that nearly floored me, a breakfast queso fundido! Yes, that's right, a hot melted cheese dip for breakfast! I hardly needed an excuse to make it! What makes this a breakfast queso fundido is that it is full of chorizo sausage and scrambled eggs which would make for a great breakfast all by themselves let alone in a hot melted cheese dip! In addition to the chorizo, scrambled eggs and cheese this queso fundido is filled out with some onions, garlic, tomato and a jalapeno for some extra heat! I have to admit that I was a little bit concerned about how scrambled eggs would work in a dip like this but they were a natural fit and they made for one amazingly tasty breakfast! This breakfast queso fundido would be the perfect way to start off the big game day right!

Let them have hot melted cheese dip for breakfast!

With the cold winter days here it is always nice to start the morning off with a warm, healthy and hearty breakfast and it is even better if that breakfast is fully cooked and waiting for you when you get up! If you are a fan of oatmeal and if you have a slow cooker this is it is super easy to do where all you need to do is place all of the ingredients for your oatmeal into the slow cooker before going to bed at night. A bowl of oatmeal certainly does not need to be boring and since it is easy to add flavours you can keep things interesting and have a different bowl of oatmeal for breakfast every morning. I have done a lot of experimenting with different flavours of oatmeal and one of my favourites has to be this oatmeal themed after apple pie; and who doesn't want a warm bowl of apple pie for breakfast? At its base, this apple pie oatmeal consists of the steel cut oats, apples, brown sugar and cinnamon and from there you can add what you like. I enjoy the addition of raisins and walnuts and of course a spoonful of caramel sauce works perfectly to sweeten things up a bit!

For those readers that got some bacon jam as a gift or for those that made their own, these bacon jam breakfast sandwiches are a great way to enjoy some of it on a lazy holiday morning. (If you don't have any bacon jam , you seriously need to try making some! It is super easy to make and so addictively good!) This breakfast sandwich combines the sweet, salty, smoky and spicy bacon jam with cool and creamy avocado on toast topped with a fried or poached egg with a perfectly runny yolk! You have to love a good messy sandwich and this is just one of those, best eaten with a knife and fork and so worth the mess!

I had some leftover pumpkin puree that I wanted to use and after the apple crumble quinoa parfaits earlier in the week, I knew exactly what I wanted to do with it; pumpkin pie quinoa parfaits! The idea was simple, mix some pumpkin pie spices and brown sugar into the pumpkin puree and layer it with Greek vanilla yogurt and quinoa spiced with cinnamon. At this point everything sounds nice and healthy but I could not resist topping it off with a gingersnap pecan streusel since gingersnaps and pecans go so well with pumpkin pie! Now i am looking forward to quick, tasty and fairly healthy desserts for breakfast from the leftovers for the next few days!

I have had the idea of using the flavour combo of butternut squash, mushrooms, kale and possibly Italian turkey sausage in a recipe for a couple of weeks but I could never really decide what to use them in and I never really had the time to think about it. Now that things have calmed down a bit I finally got to thinking about it and although my initial idea to use them in a quinoa salad sounded good I was looking for something a little different and a frittata sounded perfect! A frittata is an egg dish similar to a quiche except that it does not have a crust and it is cooked on the stove top until the eggs have set on the bottom before being transferred to the oven to finish baking. Frittatas can be filled with pretty much anything and I was thinking that the butternut squash, mushrooms, kale and sausage combo would be a great one! Even though this frittata takes a bit of time time make everything is pretty straight forward and easy and the final result is well worth the effort!
