Today I have a tasty cajun style blackened shrimp cauliflower alfredo linguini dish for you! This is basically an alfredo pasta dish with the alfredo sauce made lighter by using cauliflower rather than cream and it's just as nice and creamy and good! Some cajun seasoning is added to the sauce to add the cajun flavours and the shrimp is also seasoned with it before it is quickly blackened, by cooking it in a heavy bottom pan/skillet at a fairly high temperature, and added to the pasta and the creamy cauliflower alfredo sauce. Even with the extra step of steaming the cauliflower, this cajun shrimp cauliflower alfredo linguini comes together in no time making it a nice and quick and easy meal that is perfect for busy week nights and it's also impressive enough to serve to guests!

It's time for another comforting soup recipe to stave off the chill weather and this time is a creamy parmesan sundried tomato and spinach tortellini cauliflower soup! When I hear the word creamy in a soup I immediately think of copious amounts of heavy/whipping cream but in this soup I get the creaminess by using pureed cauliflower which gets things nice and creamy while keeping it light and healthy! Up next is the sundried tomatoes and I use a jar of oil packed sundried tomatoes where I puree half of them to infuse the soup with their flavour and I slice the remaining tomatoes so that you gets hits of their intense flavour when chewing on them! Of course there is plenty of freshly grated parmesan melted into the soup along with wilted spinach and fresh basil to finish it off. Whether you are looking for a comforting of soup to shake off the chill of a cold day or a soul warming bowl to curl up in your favourite chair with at the end of a long day this creamy parmesan sundried tomato and spinach tortellini cauliflower soup is just what you are looking for!

Looking for a tasty side dish for a special dinner? I've got you covered with this roast head of cauliflower in creamy mushroom sauce which really presents well when you place the whole head of cauliflower on the table and then slice into it to serve! Roasting cauliflower really brings out its flavour and it works just as well roasting the entire head of cauliflower as it does with roasting the florets! Once you have roasted your cauliflower you can dress it up in any number of ways and my favourite way is to top it with a creamy mushroom sauce that is just bursting with flavour! You can easily whip up the mushroom sauce while the cauliflower is roasting and when it's done you are ready to enjoy! I have been a huge fan of roasted cauliflower ever since I first tried it! There is just something about roasted cauliflower... roasting it takes something that is pretty boring and transforms it into something that is extraordinary. Even in it's simplest form, tossed in olive oil with salt and pepper, it is ridiculously addictive and I could easily chow down on a bowl of it rather than popcorn while watching a movie. The only real question is, why stop with salt and pepper when you could add any number of flavours or seasonings to the roasted cauliflower? Buffalo roasted cauliflower as to be one of my current favourites but I have plenty of ideas for roasted cauliflower starting with this chicken satay inspired one. The basic idea behind this roasted cauliflower was to marinate the cauliflower in a satay style marinade, roast it and then serve it with a Thai style spicy peanut sauce for dipping. I was a little worried that marinating the cauliflower might cause problems with roasting but it works quite well with the cauliflower absorbing a lot of the marinades flavour and it still roasts up perfectly. This satay roasted cauliflower is super tasty all by itself but the peanut sauce takes it to a whole new level of amazingness!

If you are lucky enough to still have any leftover corned beef, I have one more tasty way for you to enjoy it; in a reuben style corned beef and cauliflower hash. This hash has all of the flavours of a reuben sandwich including the corned beef, sauerkraut, melted swiss cheese, russian dressing and caraway seeds for the dark rye bread flavour. This dish could of course be done with the more common potatoes but I wanted to lighten it up a bit and went with cauliflower this time as it does amazingly well in hash! This might just be one of the easiest and tastiest ways to enjoy some leftover corned beef for breakfast!

I have been wanting to try making a pizza with a cauliflower crust ever since I came across the idea on Recipe Girl; I mean what's not to like about a cauliflower crust for a pizza? I actually got a chance to try a cauliflower crust a couple of months ago but I ran into a problem, the crust stuck so badly to the parchment paper that I could't get it off. What bits that I could get off tasted great though so I was determined to get it right! After hours of going through comments on various cauliflower pizza crust recipes the secret seems to be that you need to squeeze out as much of the liquid as possible from the cooked cauliflower before baking it. As sometimes happens this project fell through the cracks and I forgot about it until the holidays when I picked up a silicon baking mat and it practically had the cauliflower crusts name written on it. I tried the recipe again, this time squeezing out the excess liquid and using the silicon baking mat, and the crust came out beautifully and just as tasty as expected! This crust is seriously good! I could easily eat the crust all by itself as a snack or maybe with a dipping sauce not to mention all of the tasty pizza topping options!

I have really been into cauliflower lately and in particular I have been enjoying a lot of bowls of the roasted cauliflower and aged white cheddar soup which have been keeping me warm on these cold winter days. With the big game coming up I have had snacks on my mind a lot and one of my favourite snacks for for any kind of party has to be hot melted cheese dips like the spinach and artichoke dip. The other day while I was enjoying a bowl of the roasted cauliflower and aged white cheddar soup I was thinking about dips and I had a crazy idea, why not combine the two ideas and make a hot melted cheesy cauliflower dip? The recipe for the dip is pretty easy, you just need to roast the cauliflower, puree it, mix in the cheese and then bake it until the cheese is all melted, bubbling and golden brown. I have to say that this dip is another reason to love cauliflower!

Roasted cauliflower has to be one of the most addictive healthy snacks around and it only gets better when coated in buffalo hot sauce! This spicy treat would be a perfect option for a lighter and healthier snack for your party for the big game! Not only does it taste great but it is as easy to make as roasting the cauliflower and tossing it in the buffalo hot sauce so you can be licking your fingers clean in as little as 30 minutes! Just like buffalo chicken wing, this buffalo roasted cauliflower goes great with a tangy blue cheese sauce for dipping and some crunchy celery sticks to help tame the heat!

For my pan seared chicken breasts in a mushroom, tarragon and mustard pan saucedinner I want to serve it on top of something that could soak up all of that amazingly tasty sauce! One of the first things that normally comes to mind at times like this is mashed potatoes but I have really been into cauliflower lately and I have been wanting to try mashed cauliflower for a while! The mashed cauliflower is pretty much the same as mashed potatoes except that it is made with cauliflower instead of ptoatoes. You pretty much just steam the cauliflower until tender, mash it and mix in seasonings and flavours of choice. Since the sauce was the star of the show for my dinner, I wanted some pretty basic mashed cauliflower with little or no flavour to overpower the sauce so I went with a basic garlic mashed cauliflower with butter, sour cream, salt and pepper and a touch of miso paste for umami. Really you could mix in whatever flavours you wanted and you could easily do any mashed potato recipe with mashed cauliflower. I am already thinking about an aged white cheddar mashed cauliflower for next time!

Pan Seared Chicken Breasts in a Mushroom, Tarragon and Mustard Pan Sauce

With grilling season over we are now forced to cook indoors but that does not really bother me so much as I have always enjoyed cooking meat in a pan over the stove where you can get a good sear and some caramelization. Of course when you caramelize meat in a pan you get those brown bits of flavour stuck to the bottom of the pan and they are just begging to be scraped off with a nice deglazing to reclaim all of the flavour. It is with this that I made these super tasty pan seared chicken breasts in a mushroom, tarragon and mustard pan sauce which is really easy to make and quick enough to do on a weeknight. The tangy mustard and anise-y tarragon are an amazing flavour combination in this creamy pan sauce and you really cannot go wrong throwing some mushrooms in to fill out the sauce!

The roasted cauliflower and aged white cheddar soup has been on my mind a lot lately and when it came time to think about side dishes for my Thanksgiving dinner one of the first ideas that came to mind was to convert the soup into a side dish. It seemed only natural that the side dish would take the form of a gratin and a roasted cauliflower and aged white cheddar gratin was sounding really good! Although steamed cauliflower would work in a gratin, I wanted the extra flavour that roasting adds even if it meant more oven time! I kept the gratin really simple with a base of an easy bechamel sauce that the aged white cheddar is melted into before being poured over the roasted cauliflower. Once the cauliflower has been roasted the aged white cheddar bechamel sauce has been made, all that need to be done it to mix them, top them with panko bread crumbs and then bake them until golden brown.
