Crispy Smashed Potato Pancakes with Guacamole, Pico de Gallo, Bacon and Eggs
Tomorrow is Cinco de May and these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs are a great way to kick off the celebrations! The idea here is that you take some cooked potatoes and smash them down into pancake like discs, brush them with oil and bake them until the are nice and golden brown, crispy and all sorts of good! I give them a "Mexican" kick by topping them with plenty of melted cheddar cheese, guacamole, crispy bacon, a fried egg with a runny yolk and finally a fresh tomato salsa, aka pico de gallo! There are just so many amazing flavours going on in these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs which are great for breakfast lunch or dinner!

Huevos Rancheros

Huevos rancheros, or ranch style eggs, are a great way to use up leftover tortillas, refried beans and salsa, or as the case is more often for me, the perfect excuse to make some. Huevos rancheros typically consist of crispy fried tortillas topped with refried beans, salsa ranchera and a nice fried egg with a runny egg yolk! If you are using all homemade ingredients then huevos rancheros are a pretty healthy breakfast in addition to being tasty, fulfilling and easy to make! You can of course jazz things up a bit by adding extras like avocado, sour cream, cheese, etc. No matter how you serve them, these huevos rancheros are a great way to start off your Cinco de Mayo celebrations, or any day for that matter!

Looking for one last recipe idea for St Patrick's Day? I've got a great one for you! Bacon and cheese corned beef burgers with guinness caramelized onions and a fried egg! Instead of throwing all of your corned beef into the pot or slow cooker today, set some of it aside to grind up in your food processor and use it to make some really tasty burgers! Now you could easily go with the standard reuben sandwich flavours for corned beef burgers but this is my favourite way to dress them up, with bacon, cheese and Guinness caramelized onions along with a fried egg; because everything is better with a runny egg yolk! These bacon and cheese corned beef burgers with guinness caramelized onions and a fried eggs are now my new number one burger! Yum!

Chicken Enchilada Chilaquiles
It's time for another quick and easy chicken dinner, chicken enchilada chilaquiles! Chilaquiles is a Mexican dish where tortillas are fried until golden brown and crispy before being tossed in salsa and cooked until they start to soften and optionally topped with things like cheese and crema. I like to kick chilaquiles up a notch, making them even more hearty, with the flavours of chicken enchiladas, starting with an enchilada sauce, as the salsa, to which I add shredded chicken, corn and black beans. From there I top the chicken enchilada chilaquiles with onions, cheese, crema, avocado, cilantro and even a fried egg! Of course you can top these chicken enchilada chilaquiles with your favourite chicken enchilada toppings and I won't tell anyone if you enjoy them for breakfast, dinner or even a late night snack!

I certainly have been enjoying zucchini season and up next I have a Greek flavour inspired zucchini and feta breakfast casserole! I always enjoy a tasty savoury breakfast over a sweet one and it's nice to be able to sneak pack some seasonal veggies into it. This breakfast casserole has a base of eggs and cottage cheese and it's filled out with shredded zucchini and feta cheese along with plenty of fresh herbs including dill, parsley and green onions. In addition to being packed full of flavour this casserole is light, healthy and easy to make, taking less than 30 minutes. If you want to save a bit of time in the morning feel free to mix the ingredients the night before so you just need to bake in the morning. The leftovers are also great reheated so make a large batch for quick breakfasts all week long! This zucchini and feta breakfast casserole is a great way to enjoy some of the fresh summer zucchini!

Are you lucky enough to still have some leftover ham from Easter? (Or do you have some bacon on hand?) These ham and egg breakfast quesadillas are a great way to enjoy it in a tasty breakfast that is easy to make and comes together in a matter of minutes! It is so easy to add some leftover ham into scrambled eggs for a tasty breakfast but why not try doing something new and fun like quesadillas? You could throw pretty much anything that you want into these quesadillas and since I like mine spicy I tend go with salsa and jalapenos along with the ham, eggs and cheese. After a few days of these amazing ham and egg breakfast quesadillas I will be sad to see the rest of the leftover ham disappear!

I have been on an egg kick this Easter and with the success of the bacon guacamole deviled eggs I could not help but think of other flavours to use in deviled eggs and of course one of my first thoughts was of buffalo chicken deviled eggs! You really can't go wrong with buffalo chicken anything and I really liked the sound of combining chicken and egg in a tasty buffalo chicken deviled egg appetizer! The recipe for these deviled eggs could not be easier with a chicken and egg 'salad' with mayonnaise and finely diced carrots, celery, onions and a bit of blue cheese. Once everything is mixed up you just add some buffalo hot sauce, stuff the hard boiled eggs and you are all set to impress at your Easter, or other, get together!
