The taco lime grilled shrimp from the creamy avocado zucchini noodle pasta with taco lime grilled shrimp was so good that I just had to break it out into it's own recipe! I mean it's so nice and easy to make and oh so finger licking good! You can use it is a ton of different recipes from tacos, to quesadillas, to pastas, etc. or you can even just eat straight off the skewer (that's where the finger licking comes in!)! You pretty much just need to marinate the shrimp in a mixture of lime juice and a tasty homemade taco seasoning, skewer it and grill it up! There is just no way to go wrong with grilled meat on a stick and this taco lime grilled shrimp is sure to please!

Are you ready for another side dish for your Easter dinner? How about this tasty grilled asparagus with carrot ginger dressing? With spring here, even though it's still chilly here, there is asparagus from down south available and I could not resist picking some up to make this dish! This asparagus recipe is so easy, you just cook the asparagus (I like to grill it to get that slightly charred and smoky flavour) and serve it topped with the carrot-ginger dressing which is inspired by the carrot ginger dressing that you stereotypically find in Japanese restaurants. The defining characteristics of the carrot dressing are of course the carrot and ginger flavours complemented by the tangy rice vinegar and the absolutely amazing aromatics from the toasted sesame oil. With the combination of the spring asparagus and the Easter carrots this grilled asparagus with carrot ginger dressing is a perfect side dish for your Easter dinner! I hope the Easter bunny does not get upset that we turned his carrots into a dressing!

Today is officially the first day of Fall and it's still warm enough out to do some grilling so these maple dijon apple cider grilled pork chops are a great way to usher in the new season! As long as it's warm enough out I like to grill the pork chops for this recipe but it works just as well pan fried and either way they get smothered in a tasty maple dijon apple cider sauce just brimming with sliced apples. The sauce has a base of apple cider sweetened with maple syrup along with plenty of dijon mustard before adding some miso paste, soy sauce, sriracha and garlic to round things out. If you have the grill out feel free to grill the apples otherwise you can saute them until they are just starting to turn tender but are still a little crisp. (You can use either tart apples or sweet apples depending on how you like it!) No matter how you slice it, these maple dijon apple cider grilled pork chops are sure to become a staple in your fall recipe lineup!

While it's still warm enough to do some grilling I got out and did some to make this taco lime grilled chicken using my homemade taco seasoning! This taco lime grilled chicken is super easy to make, you just marinate the chicken in the taco seasoning and some lime juice, grill it and you are good to go! You can serve these tasty chicken breasts as is or slice them up and use them in anything from tacos, to burritos, quesadillas, etc. I like to make larger batches so that I have leftovers to use in other recipes requiring grilled chicken. This taco lime grilled chicken is one tasty way to enjoy some of the dwindling summer grilling days!

With the last long weekend of the summer here I have one more burger recipe for you, a green goddess zucchini turkey burger that is just packed full of summer flavour! Normally turkey burgers can be a little dry but the addition of zucchini keeps them nice and moist and juicy so there's no reason to shy away from these turkey burgers! The patties themselves are seasoned with green goddess style herbs including basil, tarragon and chives along with some anchovies, Worcestershire sauce and parmesan for tonnes of umami flavour! The rest of the burgers consists of ripe green heirloom tomatoes, avocado, cucumber, pickled onions, spinach sprouts, melted mozzarella and green goddess mayo! These green goddess zucchini turkey burgers are a great way to celebrate and enjoy summers bounty and they are the perfect burger for this long weekend!

BBQ Chicken Salad with Avocado Dressing

Up next is the salad that I made the creamy avocado dressing for, a hearty BBQ chicken salad that eats like a meal. With the warmer days here there is more time for grilling and throwing some grilled chicken onto a salad makes for some nice quick and easy summer meals. It has been a while since I have done anything with BBQ sauce and I had been craving the some of that tasty, sweet and spicy mixture! A BBQ chicken salad seemed like a great way to go and I was immediately thinking about building the salad up with some tomatoes, black beans and grilled corn from the cob. I was also initially thinking about adding diced avocado but I changed my mind and went with a fresh, creamy, guacamole like avocado dressing instead. The combination of the sweet and spicy BBQ chicken with the creamy avocado dressing was quit impressive and the rest of the salad did not disappoint either! I could easily see adding the diced avocado back into the salad along with the avocado dressing for the texture and even more avocado goodness!
