Grilled Asparagus with Carrot Ginger Dressing
Are you ready for another side dish for your Easter dinner? How about this tasty grilled asparagus with carrot ginger dressing? With spring here, even though it's still chilly here, there is asparagus from down south available and I could not resist picking some up to make this dish! This asparagus recipe is so easy, you just cook the asparagus (I like to grill it to get that slightly charred and smoky flavour) and serve it topped with the carrot-ginger dressing which is inspired by the carrot ginger dressing that you stereotypically find in Japanese restaurants. The defining characteristics of the carrot dressing are of course the carrot and ginger flavours complemented by the tangy rice vinegar and the absolutely amazing aromatics from the toasted sesame oil. With the combination of the spring asparagus and the Easter carrots this grilled asparagus with carrot ginger dressing is a perfect side dish for your Easter dinner! I hope the Easter bunny does not get upset that we turned his carrots into a dressing!

Up next I have some spicy sriracha teriyaki chicken meatballs that are just perfect for both snacking on while watching the game and for dinner. Anything teriyaki starts out with a teriyaki sauce and I like to make my own, especially when it's a simple combination of salty soy sauce with something sweet like mirin or in this case brown sugar. (Teriyaki sauce usually also contains sake but it's ok to omit it here.) These meatballs begin as you would expect with some ground chicken along with an egg and breadcrumbs as binders and they are seasoned with green onions, garlic, ginger and a touch of the tasty homemade teriyaki sauce. When I think about things teriyaki I often think about adding pineapple since it's such a fabulous combination so these meatballs also contains some crushed pineapple and the teriyaki sauce uses pineapple juice! Once the meatballs are assembled they just take a few minutes in the oven to bake, then you toss them in the teriyaki sauce and you are in teriyaki chicken meatball heaven! Serve with toothpicks and extra sriracha chili sauce if desired!

While thinking about appetizers and snacks for my New Year's Eve party I could not help but think of making something healthy, to get a head start on those New Year's resolutions, and I just had to make these Spicy Tuna and Avocado Cucumber Sushi Bites treats! The basic idea was to take my favourite sushi, spicy tuna, and instead of rolling it up in that carbalicious sushi rice that I would serve it on a slice of cucumber, which is nice and juicy and healthy and it makes it perfect finger food! The sushi grade tuna is seasoned with soy sauce for saltiness, sriracha for the spicy heat, mirin for a touch of sweetness, green onions and sesame oil and seeds. The final component is of course cool and creamy avocado which rounds things out when combined with the juicy cucumber! Not only are these bite sized 'sushi' appetizers ridiculously tasty but they are also super easy to make, so much easier than rolled sushi, so they are a great for entertaining! Last week I went out for sushi and that got me thinking about making sushi at home. Although I am still a bit leery about making actual sushi at home with raw fish, that does not stop me from having a bit of fun with sushi in the form of this buffalo chicken sushi! I am totally addicted to buffalo chicken in all forms and when I came across the recipe for buffalo chicken sushi on Choosy Beggars I immediately bookmarked it to try later! This sushi contains all of the flavours of buffalo chicken wings including the buffalo chicken, blue cheese, carrots and celery all rolled up in rice and nori. Sushi is actually pretty easy to make at home and this tasty buffalo chicken sushi is definitely worth the effort! You can serve this buffalo chicken sushi with soy sauce, hot sauce or even blue cheese dressing for your dipping pleasure and I served it with a drizzle of mayo and hot sauce.
