Today, October 15, is National Mushroom day and do I ever have a tasty mushroom recipe for you today! Mushroom quesadillas with chipotle crema! These mushroom quesadillas are super easy to make where you pretty much just saute the mushrooms with some onion, place them in tortillas, along with plenty of cheese and then fry them until the tortillas are lightly golden brown and crispy and the cheese has melted! I always like for there to be a source of spicy heat with my quesadillas so I serve there mushroom quesadillas with a smokey chipotle crema that you can either drizzle on or serve it on the side for dipping!

Are you lucky enough to still have some leftover ham from Easter? (Or do you have some bacon on hand?) These ham and egg breakfast quesadillas are a great way to enjoy it in a tasty breakfast that is easy to make and comes together in a matter of minutes! It is so easy to add some leftover ham into scrambled eggs for a tasty breakfast but why not try doing something new and fun like quesadillas? You could throw pretty much anything that you want into these quesadillas and since I like mine spicy I tend go with salsa and jalapenos along with the ham, eggs and cheese. After a few days of these amazing ham and egg breakfast quesadillas I will be sad to see the rest of the leftover ham disappear!

Pineapple was cheap the other week so I picked some up on a whim and although I was enjoying eating it as is, I couldn't help but think of using some of it in a recipe. For those of you that have been following for a while, you will not be surprised that one of my first ideas was using it in a grilled cheese sandwich, though as it happened I was out of bread but I did have some extra tortillas that needed using and so quesadillas it was! With all of the cold weather lately I have been dreaming about warmer days and the BBQ chicken and pineapple flavour combo was sounding really good for a cheesy quesadilla, along with some spicy jalapenos for extra heat of course. If it were warmer out I would fire up the grill, grill some chicken and slather it with BBQ sauce but since that was not viable I went with the simpler leftover shredded chicken option, which also happens to be much quicker to implement. I have to say that the combo of the sweet and spicy BBQ chicken and juicy and tangy pineapple was a fabulous one! The ooey gooey cheesy quesadillas were pretty amazing and certainly did remind me warmer days; a perfect way to enjoy that pineapple!

I was immediately captivated by the idea of topping a quesadilla like a pizza when I first came across it a while ago! I mean you really cannot go wrong combining two great things like quesadillas and pizza! Ever since I made the taco quesadilla pizzas I have been wanting to try making pizza pizza quisadillas and I could not hold off on making them any longer! The basic idea is that you make a pizza quesadilla, stuffed with your favourite pizza ingredients including pizza sauce, mozzarella cheese, pepperoni and black olives, and then you top the quesadilla with more of the pizza toppings and quickly bake it to melt the cheese on top!

Peach season is quickly fading and I have been trying to enjoy them as much as I can before they are all gone for another year. In fact this week I may have gone a little overboard and gotten a few too many of them! Not to worry though as I have been happily coming up with new ways to use them including in these tasty peach quesadillas. The recipe could not be simpler, you just need some leftover cooked and shredded chicken mixed in with some BBQ sauce, cheese, tortillas and optionaly, some cilantro, in addition to a fresh peach. Once everything is assembled you just need to cook it until the cheese has melted and then you are in a peach and melted cheesy heaven! The sweet, spicy and tangy BBQ chicken goes really well with the juicy peaches and ooey gooey melted cheese! What a great way to enjoy some peaches!

When you make the corn and black bean tacos with roast zucchini salsabe sure to make a double batch as the leftovers are great in other dishes like these quesadillas. You really cannot go wrong taking the sweet caramelized corn along with the creamy black bean and the fresh and tasty zucchini salsa with a nice spicy heat and wrapping them all in a toasted golden brown tortilla along with plenty of melted cheese! Once the corn and black beans and zucchini salsa are made these quesadillas only take a few minutes to make which is good because you will want to make them all the time! What a great way to enjoy some of the last of summers produce!

Thoughts of bacon jam have been haunting me ever since my first batch ran out a couple of weeks ago. Unfortunately it ran out long before I had finished using it in all of the things that I wanted to and I figured that that was the perfect excuse to make another batch! The next thing on my list to try were these quesadillas with bacon jam, guacamole and plenty of melted cheese. Despite the fact that the bacon jam is extremely versatile and can be used in a lot of different ways I seem to keep thinking of it in terms of breakfasts and it seemed only natural to top the quesadillas with a fried egg and have them for breakfast! I was thinking that the fried egg might be a little lonely sitting there on top of the quesadilla all by itself so I jazzed it up a bit with a drizzle of a bacon jam vinaigrette.
