Greek Goddess Grain Bowl with Fried Zucchini, Halloumi and Toasted Seeds
When I came across this recipe for a Greek goddess grain bowl with fried zucchini, halloumi and toasted seeds on Half Baked Harvest I knew that I just had to make it, I mean it has so many of my favourite Greek/Mediterranean flavours in it! This recipe includes plenty of tasty ingredients but the stars of the show are the crispy fried zucchini, fried halloumi cheese (a Mediterranean cheese that holds it shape when fried and 'squeaks' when you chew it) crunchy toasted seeds and a fresh basil and lemon tahini dressing! Other ingredients in this salad include, crunchy cucumbers, juicy tomatoes, salty kalamata olives, sweet and smoky roasted red pepper, artichoke heart, cool and creamy avocado and fresh herbs like basil and mint. This salad is amazing with it's wide variety of different flavours, textures and even temperatures with the hot crispy fried zucchini and they all work so well together, especially in that tasty basil and lemon tahini dressing!

After all of that rich St Patrick's Day fare I was looking for something on the lighter side which was perfect timing since this roasted sweet potato and black bean quinoa salad had been on my mind for a while. There is just something about the sweet potato, creamy black bean and smoky and spicy chipotle chili flavour combo that keeps me coming back for more and this quinoa salad is a great way to enjoy it! In addition to being super tasty, this salad is really easy to make and it only takes as much time to throw together as it takes to roast the sweet potato es!

Ever since I discovered quinoa cakes I have been dreaming up different flavour combinations for them! A quinoa cake or fritter is pretty much what it sounds like, a mixture of quinoa with a binder such as an egg and breadcrumbs that is formed into cakes or patties and then fried until crispy. One of the great things about cakes like this is that in addition to the main ingredient you can add pretty much whatever you want for flavour! I am a big fan of the spicy and smoky chipotle, sweet potato and creamy black bean combo and I am more than a little surprised that it took me this long to throw them into some quinoa cakes!

I had some leftover pumpkin puree that I wanted to use and after the apple crumble quinoa parfaits earlier in the week, I knew exactly what I wanted to do with it; pumpkin pie quinoa parfaits! The idea was simple, mix some pumpkin pie spices and brown sugar into the pumpkin puree and layer it with Greek vanilla yogurt and quinoa spiced with cinnamon. At this point everything sounds nice and healthy but I could not resist topping it off with a gingersnap pecan streusel since gingersnaps and pecans go so well with pumpkin pie! Now i am looking forward to quick, tasty and fairly healthy desserts for breakfast from the leftovers for the next few days!

I have been a fan of quinoa ever since I discovered it and I am always looking for new ways to enjoy it. I recently came across the idea of using it in an apple and quinoa parfait with a crumble topping on Epicureean Mom that sounded so good that I had to try it! I have used quinoa in parfaits before so I knew that it worked well in them and that this apple crumble one would be a winner! This parfait layers vanilla yogurt with cinnamon spiced quinoa and a simple apple compote and it is topped with a rolled oat crumble! Not only is this parfait easy to make but it is also pretty healthy and makes for a great breakfast! If you have any leftovers, simply throw the components into separate containers and refrigerate them all except the crumble topping and the next day you can use them to throw another parfait together in a few minutes.

Cheesy Broccoli Quinoa

One of my favourite side dishes has to be cheesy broccoli ricewhich is a quick and easy dish where with the amazing broccoli and cheddar cheese flavour combo! Ever since I discovered quinoa I have been trying my favourite rice dishes with the rice replaced with the healthier quinoa and it was finally time to try a cheesy broccoli quinoa! This dish is super easy to make and you pretty much just cook the quinoa with the broccoli and then mix in the cheese once the quinoa and broccoli are cooked. Some of the things that I like about this recipe are that it is a one pot dish and that it is a stove top dish which is great for holiday dinners where there never seems to be enough oven space or time. I think I now have a new favourite side dish!

Cheesy Zucchini Quinoa

One of my goto side dishes is a cheesy broccoli ricewhich is super easy to make and downright tasty. Ever since I discovered that quinoa can be a good substitute for rice in a lot of dishes I have been slowly remaking a lot of my favourite rice dishes with quinoa and it was time to try a cheesy broccoli quinoa. Well my intention was to make a cheesy broccoli quinoa but I really couldn't justify buying broccoli when I already had a bunch of zucchini in the fridge just waiting to be used in something and so I ended up making this cheesy zucchini quinoa. This side dish is just as easy to make as the original where you simply need to cook the quinoa and mix in the grated zucchini and cheese. Many different cheeses would work in this but I am rather partial to a nice sharp cheddar or gruyere.

Over the last few years I have had some fun experimenting with different kinds of fritters. Most of these fritters have had the man ingredient as a vegetable but I wanted to try something a little bit different and make some fritters with all of the flavours of buffalo chicken and with the recent success of the quinoa fritters , buffalo chicken quinoa fritters were definitely the way to go! Fried rice is one of those super quick and easy comfort food dishes that is always satisfying and I recently found myself wondering how quinoa would do in a fried rice dish. There are a lot of great fried rice dishes out there and my favourite has to be a Thai style pineapple and shrimp fried rice which is packed with amazing flavours and it seemed like the perfect candidate to be made with quinoa! I mean, you really cannot go wrong tossing some juicy, sweet and tangy pineapple along with succulent shrimp in some light and fluffy fried quinoa!

Blueberry Quinoa Parfait

With summer almost here there has been a near constant supply of berries in the stores and this week blueberries were on sale so I picked up a bunch of them. After polishing off a significant amount of them just by snacking on them plain I decided that it was time to do something with them and I knew exactly what that was, a breakfast quinoa parfait. I am a big fan of quinoa and I am always looking for new and interesting ways to use it and the idea for the breakfast quinoa parfait has been on the back of my mind all winter just waiting for the fresh summer berries to show up. The basic idea for the quinoa parfait was to layer quinoa with yogurt and berries and after that you could add pretty much anything else that you like. Since I was using blueberries this time I decided to pair them with some toasted pecans and to use vanilla yogurt though I was also contemplating on going with plain yogurt and then topping the whole thing off with maple syrup.
