Looking for one last recipe idea for St Patrick's Day? I've got a great one for you! Bacon and cheese corned beef burgers with guinness caramelized onions and a fried egg! Instead of throwing all of your corned beef into the pot or slow cooker today, set some of it aside to grind up in your food processor and use it to make some really tasty burgers! Now you could easily go with the standard reuben sandwich flavours for corned beef burgers but this is my favourite way to dress them up, with bacon, cheese and Guinness caramelized onions along with a fried egg; because everything is better with a runny egg yolk! These bacon and cheese corned beef burgers with guinness caramelized onions and a fried eggs are now my new number one burger! Yum!

Thanksgiving Grilled Cheese Sandwich

Now that the Thanksgiving dinner is done with it's time to get to the fun part, enjoying the leftovers in tasty new dishes! I am a big fan of grilled cheese sandwiches and I was thinking that it would be nice to make a Thanksgiving leftover grilled cheese sandwich except instead of using slices of bread, why now use the stuffing/dressing? The basic idea was to press the leftover stuffing/dressing down into the pan in the basic shape of a slice of bread, top it with cheese, leftover roast turkey, cranberry sauce etc. and grill it up until the cheese has melted and the outsides are nice and golden brown and slightly crispy! I was thinking that the whole idea was based on the stuffing/dressing as bread so it was not going to hold up that well so why not sprinkle even more cheese on the outside so that it would melt and caramelize and hold the 'bread' together a bit more. Even with all of the cheese holding this grilled cheese sandwich together it's still going to be one monstrous sandwich that is eaten with a knife and a fork! I topped the Thanksgiving leftover grilled cheese sandwich off with some gravy and cranberry sauce and a side of garlic mashed potatoes making for one really tasty lunch for the day after Thanksgiving!

With the last long weekend of the summer here I have one more burger recipe for you, a green goddess zucchini turkey burger that is just packed full of summer flavour! Normally turkey burgers can be a little dry but the addition of zucchini keeps them nice and moist and juicy so there's no reason to shy away from these turkey burgers! The patties themselves are seasoned with green goddess style herbs including basil, tarragon and chives along with some anchovies, Worcestershire sauce and parmesan for tonnes of umami flavour! The rest of the burgers consists of ripe green heirloom tomatoes, avocado, cucumber, pickled onions, spinach sprouts, melted mozzarella and green goddess mayo! These green goddess zucchini turkey burgers are a great way to celebrate and enjoy summers bounty and they are the perfect burger for this long weekend!

Up next for grilled cheese month I bring you a grilled cheese sandwich inspired by caramel apples! That combo of tart juicy apples with sweet caramel sauce is simply irresistible and the the sweet and savoury apple and cheddar combo is not too far behind so why not combine the two? This sandwich is really easy to make, simply combining cheddar cheese, sliced apples and caramel saucein a grilled cheese! The one caveat about this sandwich is that fresh apple slices tend to pop out of it when you eat it but you can alleviate this by sauteing the apples a bit to tenderize them first. It really comes down to whether you prefer the crisp apples or the ease of eating the sandwich but either way you are in apple, caramel and ooey gooey melted cheddar heaven. Although the caramel apple grilled cheese sandwich is amazing all by itself, you can make it even more decadent by adding bacon; where the salty bacon balances the tart apple and sweet caramel sauce nicely.

Bacon Double Cheeseburger Grilled Cheese Sandwich

April is National grilled cheese month! Given my obsession with grilled cheese sandwiches you can bet that there are going to be some new grilled cheese sandwiches on Closet Cooking over the next few weeks starting off with these absolutely tasty bacon double cheeseburger grilled cheese sandwiches! The idea here is to include all of the flavours of a mouth watering bacon double cheese burger in grilled cheese form. This sandwich starts out with the bacon and then it moves on to some ground beef that is seasoned with some classic burger patty flavours such as onions, garlic, worcestershire sauce and salt and pepper or steak seasoning. You can't have a burger without some condiments like ketchup and/or mustard and since you don't really want a soggy grilled cheese sandwich I add them to the ground beef and cook off some of the excess moisture. Up next is the double cheese, the cheddar and mozzarella, followed by the fresh condiments including shredded lettuce, diced tomato and pickle. (You could skip the lettuce and tomato but trust me they work well in the sandwich without wilting or making it soggy.) I have to say that these are one of my new favourite grilled cheese sandwiches and they taste just like a bacon double cheese burger, only better!

Corned Beef Cuban Grilled Cheese Sandwich

I recently made some lechon asado (Cuban roast pork)and I used it to make some tasty Cuban style sandwiches. A reader recently suggested trying a St Patrick's Day take on the Cuban sandwich replacing the ham with corned beef which sounded really good! I am no stranger to mixing things up and one of my favourite takes on a Cuban sandwich has to be my Thanksgiving Cuban sandwichwhere the roast pork is replaced with roast turkey and cranberry sauceis thrown into the mix, so I needed little convincing to try the St Patrick's day version! As luck would have it I still had some roast pork in the freezer and I had just made some corned beefso I was all set to go. Normally a Cuban sandwich is made in a Cuban bun and cooked pressed but I decided to make this sandwich more grilled cheese style in golden brown crispy butter-y bread that is grilled to perfection. I have to say that the corned beef makes for an excellent substitution for the ham in a Cuban sandwich and I will definitely be making these again! Next time I think I might throw some russian or thousand island dressing and try to work in some sauerkraut and make it more of a reuben Cuban sandwich!

One of the best things about St Patrick's Day has to be all of the leftover corned beefand although the reuben sandwichis my favourite way to enjoy those leftovers, it is sometimes difficult to wait until lunch to make a reuben sandwich! This year I thought that it would be nice to push it up a bit and have a reuben for breakfast in the form of a breakfast sandwich in an english muffin with a fried egg! This breakfast reuben sandwich has all of the flavours of a regular reuben sandwich with the corned beef, swiss cheese, sauerkraut and russian or thousand island dressing but it is served in an english muffin with a fried egg. The only thing that is missing really is the lack of rye bread and if you feel up to it you could make your own rye english muffins but I took an easier route and simply added one of the primary flavours of a rye bread, the caraway seeds, to the breakfast sandwich. This sandwich certainly is one tasty breakfast treat and a perfect way to get a start to the day after St Patrick's Day!

Cuban Sandwich

At the beginning of the week I had plenty of freshly minted leftover Cuban roast pork (lechon asado) and of course the first thing that I thought to use it in was a sandwich, a Cuban sandwich in particular. The Cuban sandwich , popularized in Florida, consists of roast pork, ham, swiss cheese, yellow mustard and pickles and it is generally 'pressed' when grilled. As luck planning would have it, I also just happened to also have some roast ham on hand so I was all set to make some Cuban sandwiches! These sandwiches are really easy to make, you pretty much just assemble the sandwich and grill it in a panini press. (I don't have a panini press so I just used a grill pan and 'pressed' down on the sandwich with a mixing bowl.) Despite being so simple, the Cuban sandwich is packed full of flavour and all of the flavours work so well together! The Cuban sandwich works particularly well with the lechon asado that has been marinated in the sour orange and garlic mojo and if you have any extra mojo on hand, throw some into the sandwich or dip your sandwich into it for even more kick! If you are using lechon asado for your roast pork and if you had any crackling, add some to the sandwich for a tasty crunchy texture! These sandwiches certainly are a great way to enjoy some of the leftover Cuban roast pork (lechon asado) !

With the holidays quickly approaching I figured that it was about time to start making some gifts and of course the first thing on my list was a couple of batches of bacon jam ! I mean you really cannot go wrong giving this super tasty, sweet, salty, smoky and spicy bacon jam as a gift this year! In addition to making the bacon jam as gifts for others I could not resist making some for myself and the first thing that I used it in was a chicken club sandwich with a grilled chicken breast, lettuce, tomato and even more bacon along with some spicy chipotle mayo and some cool and creamy avocado. The bacon jam works amazingly well in a chicken club sandwich and this has to be one of the tastiest sandwiches that I have had in a while!

Sorry about the lack of updates this past week; I had some computer problems which are hopefully resolved now!

You can still get green tomatoes at the grocery store and I have been taking full advantage of that by enjoying plenty of fried green tomatoes including more than a few fried green tomato BLTs! Once the field ripened tomatoes disappear in the late fall the green tomatoes show up and once fried until tender, these tart and tangy green tomatoes make an excellent substitute for red in BLTs! Of course, I like to play around with my fried green tomato BLTs just like I do with regular BLTs and this time I was thinking about a new version with pimento cheese . Normally adding cheese to a BLT might not be the first thing that would come to mind but the addictively good, sweet, spicy and creamy pimento cheese finds a perfect home in one!

One of my favourite parts about the Thanksgiving dinner has to be enjoying the leftovers for the rest of the week and in particular the turkey leftovers. Inevitably the first thing that I do with the leftover breast meat is make roast turkey club sandwiches and they always includes a healthy dose of homemade cranberry sauce ! There is just something magical about the combo of turkey, cranberry sauce, mayonnaise, crisp lettuce and juicy tomatoes and I am hopelessly addicted to it! Over the last week I have enjoyed a number of these sandwiches and for a few of them I decided to play around a bit by making them more like turkey club sandwiches by adding bacon.

Another fall treat is green tomatoes which make a brief appearance at the farmers market when the weather threatens to destroy the tomatoes before they ripen. Ever since I first discovered them I eagerly await them each fall and this weekend they made their first appearance. Inevitably the first thing that I do with them is to make some fried green tomatoes which is a Southern dish where slices of green, unripe, tomatoes are coated in cornmeal and fried until crispy. After an initial batch of fried green tomatoes I wanted to combine them with another Southern delicacy, pimento cheese , a combination of cheddar cheese, pimentos and mayonnaise, and make, you guessed it, a fried green tomato and pimento cheese sandwich!

Grilled Eggplant and Red Pepper Sandwich with Halloumi

Up next for my homemade roasted red pepperswas to use them in a sandwich along with some grilled eggplant and halloumi. Halloumiis a Greek Cypriot cheese that fries well, retaining its shape rather than melting and gets 'squeaky' once fried. Simple fried halloumi with a splash of lemon juice is amazing all by itself but it also makes a great addition to a sandwich such as this one! I am still a little conflicted as to whether I should be diving into fall dishes or relishing the final days of summer and summer won out with this sandwich and I finished it off with field ripened beefsteak tomatoes and some fresh homemade basil pesto!

I certainly have been enjoying a lot of BLTs these days with all of the beautiful local, field ripened beefsteak tomatoes around! It can sometimes be difficult to imagine improving on an already amazing sandwich like the BLT but adding an egg is a good place to start! There are a lot of ways to add an egg to a BLT but the first thought that comes to my mind is in the form of a quick and easy egg salad made with creamy mayo and a touch of a tangy mustard. I guess that once you add egg to the mix it is no longer a BLT but it becomes a BELT sandwich! Of course an even easier way to add an egg to a BLT is to simply add a fried egg and with that runny yolk it is very hard to resist!

I have really been enjoying all of the fresh, perfectly field ripened tomatoes a lot these days, especially in BLTs ! I guess it was pretty much inevitable that at some point I would think about combining a BLT with a grilled cheese sandwich and this BLT grilled cheese, aka the BLTGC, is the tasty results of my wild musings! The recipe pretty much just wrote itself taking the buttered bread and cheese from the grilled cheese and the bacon, lettuce and tomato from the BLT and grilling it up until the outside is golden brown and all of the cheese has melted. For the bacon you could use either strips of whole slices and for the lettuce you could go with either whole leafs or shredded and you could use either whole tomato slices or you could dice them. One trick that I learned when using green tomatoes in sandwiches is that it is good to lightly fry them in a touch of bacon grease to warm and soften them up a bit which I applied to the tomato slices in this sandwich. I was kind of hesitant about using lettuce in a warm grilled cheese sandwich but it worked like a charm without getting nasty like lettuce can when it is cooked! I have to say that this BLT grilled cheese sandwich turned out amazingly well, easily as good as if not better than either of the sandwiches that gave it birth!

Although the BLT usually steals the spot light at this time of year with all of the field ripened tomatoes around, another great way to enjoy them is simply in an open-faced sandwich covered in melted cheese. It is really hard to beat the tomato and cheddar combo, especially if that cheddar is all melted and good but throw a touch of tangy mayo and fresh cracked black pepper and you've really got a winner in under 10 minutes!

This has to be one of my favourite times of the year with all of the fresh field ripened tomatoes! I am a big fan of tomatoes and it is hard to beat a field ripened tomato so I have been picking them up by the basket full lately. Of course one of the best ways to enjoy some tomatoes is in the ever so simple and yet ever so good, BLT! BLT's are great with just the bacon, lettuce and tomato but I always have fun adding different things and this time it was a cool and creamy guacamole . Guacamole and bacon are a fabulous flavour combo and the tomato and avocado combo is hard to beat so you know that this guacamole BLT sandwich is going to be a winner!

Late summer has to be one of my favourites times of year with all of the amazing fresh produce that is available and I particularly enjoy all of the field ripened tomatoes! One of the best, quickest and easiest way to enjoy all of those tomatoes has to be in BLTs! A BLT is a sandwich consisting of bacon lettuce and tomato and it is a classic with good reason as the salty bacon, the crisp lettuce and sweet and the juicy tomatoes is a magical combination! All it takes to make a BLT is to cook the bacon, assemble the sandwich and you are in cloud nine in less than ten minutes!
