Grilled cheese sandwiches are so easy to make and always good, especially when you add tasty extras to them like bacon, avocados, BBQ pulled pork, etc. As easy as they are to make there is a huge difference between a poorly made grilled cheese sandwich and a well made one so check out my tips on how to make the perfect grilled cheese sandwich! I am a huge fan of grilled cheese sandwiches and I have over 60 recipes for them on my site so it was difficult for me to choose just 30 of them but all of these sandwiches are truly amazing! Looking for one last recipe idea for St Patrick's Day? I've got a great one for you! Bacon and cheese corned beef burgers with guinness caramelized onions and a fried egg! Instead of throwing all of your corned beef into the pot or slow cooker today, set some of it aside to grind up in your food processor and use it to make some really tasty burgers! Now you could easily go with the standard reuben sandwich flavours for corned beef burgers but this is my favourite way to dress them up, with bacon, cheese and Guinness caramelized onions along with a fried egg; because everything is better with a runny egg yolk! These bacon and cheese corned beef burgers with guinness caramelized onions and a fried eggs are now my new number one burger! Yum!

Thanksgiving Grilled Cheese Sandwich

Now that the Thanksgiving dinner is done with it's time to get to the fun part, enjoying the leftovers in tasty new dishes! I am a big fan of grilled cheese sandwiches and I was thinking that it would be nice to make a Thanksgiving leftover grilled cheese sandwich except instead of using slices of bread, why now use the stuffing/dressing? The basic idea was to press the leftover stuffing/dressing down into the pan in the basic shape of a slice of bread, top it with cheese, leftover roast turkey, cranberry sauce etc. and grill it up until the cheese has melted and the outsides are nice and golden brown and slightly crispy! I was thinking that the whole idea was based on the stuffing/dressing as bread so it was not going to hold up that well so why not sprinkle even more cheese on the outside so that it would melt and caramelize and hold the 'bread' together a bit more. Even with all of the cheese holding this grilled cheese sandwich together it's still going to be one monstrous sandwich that is eaten with a knife and a fork! I topped the Thanksgiving leftover grilled cheese sandwich off with some gravy and cranberry sauce and a side of garlic mashed potatoes making for one really tasty lunch for the day after Thanksgiving!

With the last long weekend of the summer here I have one more burger recipe for you, a green goddess zucchini turkey burger that is just packed full of summer flavour! Normally turkey burgers can be a little dry but the addition of zucchini keeps them nice and moist and juicy so there's no reason to shy away from these turkey burgers! The patties themselves are seasoned with green goddess style herbs including basil, tarragon and chives along with some anchovies, Worcestershire sauce and parmesan for tonnes of umami flavour! The rest of the burgers consists of ripe green heirloom tomatoes, avocado, cucumber, pickled onions, spinach sprouts, melted mozzarella and green goddess mayo! These green goddess zucchini turkey burgers are a great way to celebrate and enjoy summers bounty and they are the perfect burger for this long weekend!

Up next for grilled cheese month I bring you a grilled cheese sandwich inspired by caramel apples! That combo of tart juicy apples with sweet caramel sauce is simply irresistible and the the sweet and savoury apple and cheddar combo is not too far behind so why not combine the two? This sandwich is really easy to make, simply combining cheddar cheese, sliced apples and caramel saucein a grilled cheese! The one caveat about this sandwich is that fresh apple slices tend to pop out of it when you eat it but you can alleviate this by sauteing the apples a bit to tenderize them first. It really comes down to whether you prefer the crisp apples or the ease of eating the sandwich but either way you are in apple, caramel and ooey gooey melted cheddar heaven. Although the caramel apple grilled cheese sandwich is amazing all by itself, you can make it even more decadent by adding bacon; where the salty bacon balances the tart apple and sweet caramel sauce nicely.

April is National grilled cheese month! Given my obsession with grilled cheese sandwiches you can bet that there are going to be some new grilled cheese sandwiches on Closet Cooking over the next few weeks starting off with these absolutely tasty bacon double cheeseburger grilled cheese sandwiches! The idea here is to include all of the flavours of a mouth watering bacon double cheese burger in grilled cheese form. This sandwich starts out with the bacon and then it moves on to some ground beef that is seasoned with some classic burger patty flavours such as onions, garlic, worcestershire sauce and salt and pepper or steak seasoning. You can't have a burger without some condiments like ketchup and/or mustard and since you don't really want a soggy grilled cheese sandwich I add them to the ground beef and cook off some of the excess moisture. Up next is the double cheese, the cheddar and mozzarella, followed by the fresh condiments including shredded lettuce, diced tomato and pickle. (You could skip the lettuce and tomato but trust me they work well in the sandwich without wilting or making it soggy.) I have to say that these are one of my new favourite grilled cheese sandwiches and they taste just like a bacon double cheese burger, only better!

Corned Beef Cuban Grilled Cheese Sandwich

I recently made some lechon asado (Cuban roast pork)and I used it to make some tasty Cuban style sandwiches. A reader recently suggested trying a St Patrick's Day take on the Cuban sandwich replacing the ham with corned beef which sounded really good! I am no stranger to mixing things up and one of my favourite takes on a Cuban sandwich has to be my Thanksgiving Cuban sandwichwhere the roast pork is replaced with roast turkey and cranberry sauceis thrown into the mix, so I needed little convincing to try the St Patrick's day version! As luck would have it I still had some roast pork in the freezer and I had just made some corned beefso I was all set to go. Normally a Cuban sandwich is made in a Cuban bun and cooked pressed but I decided to make this sandwich more grilled cheese style in golden brown crispy butter-y bread that is grilled to perfection. I have to say that the corned beef makes for an excellent substitution for the ham in a Cuban sandwich and I will definitely be making these again! Next time I think I might throw some russian or thousand island dressing and try to work in some sauerkraut and make it more of a reuben Cuban sandwich!
