Creamy Garlic and Brie Mushrooms

Creamy Garlic and Brie Mushrooms
Mushrooms are one of my favourite foods and although I am perfectly happy with simple mushrooms sautéed in butter and garlic it's always nice to change things up! These creamy garlic and brie mushrooms are one of the tastiest ways that I have come up with for enjoying some basic button mushrooms as a quick and easy dish that is a great side for any meal (or just devouring by the bowlful!). The recipe could not be simpler, you cook the button mushrooms, whole, in butter until they are nice and tender and they have released their liquids before adding the garlic and then creating the creamy sauce with a combination of broth and brie cheese! Finish everything off with some salt and pepper along with an optional garnish of parsley and you have a tasty mushroom side dish that is ready to be inhaled from the table before you can blink!

Grilled Asparagus with Carrot Ginger Dressing

Grilled Asparagus with Carrot Ginger Dressing
Are you ready for another side dish for your Easter dinner? How about this tasty grilled asparagus with carrot ginger dressing? With spring here, even though it's still chilly here, there is asparagus from down south available and I could not resist picking some up to make this dish! This asparagus recipe is so easy, you just cook the asparagus (I like to grill it to get that slightly charred and smoky flavour) and serve it topped with the carrot-ginger dressing which is inspired by the carrot ginger dressing that you stereotypically find in Japanese restaurants. The defining characteristics of the carrot dressing are of course the carrot and ginger flavours complemented by the tangy rice vinegar and the absolutely amazing aromatics from the toasted sesame oil. With the combination of the spring asparagus and the Easter carrots this grilled asparagus with carrot ginger dressing is a perfect side dish for your Easter dinner! I hope the Easter bunny does not get upset that we turned his carrots into a dressing!

Venezuelan Black Bean and Chorizo Soup

Venezuelan Black Bean and Chorizo Soup
I was at a Venezuelan restaurant recently and I ordered the black bean and chorizo soup, since I always enjoy a tasty bean soup. I was expecting to get a more Mexican style spicy soup but to my surprise the first bite was slightly sweet with hints of molasses and that took me back for a second. Then I took a second bite, this one including a piece of the spicy cured chorizo sausage, and I was amazed at how well the combination of the slightly sweet black bean soup worked with the spicy chorizo sausage! Of course I knew that I would have to try making the soup at home! :)

The recipe pretty much wrote itself, being a standard black bean and chorizo soup with the addition of molasses and a bit of brown sugar to sweeten it; I know that there is a special kind of sugar that is traditionally used but since I could not find it here I made some simple substitutions. The resulting homemade version was phenomenal! I am still a little surprised at how well the slightly sweet and spicy combo works so well in a black bean soup like this but this is definitely my new favourite soup!

Lemon Chicken Orzo Soup

Lemon Chicken Orzo Soup
With the colder weather I have been thinking about soups more and I thought that I would start out with this nice and hearty, light and bright lemon chicken orzo soup. This soup is essentially a take on a chicken noodle soup using orzo as the 'noodle' and it emphasizes brightness by the use of lemon juice and zest along with plenty of fresh parsley. In addition, I like to add a touch of thyme for some earthiness and a bit of tarragon which perfectly complements the bright flavours of the soup and adds a hint of the exotic with its anise-y and vanilla-y undertones! This soup is pure comfort food that is absolutely amazing on a cold winter day, it's hot, filling and it adds a bit of summery sunshine to your day! What's even better is that it takes less than 30 minutes to make and it will fit into your New Year's diet resolutions!

Roast Head of Cauliflower in Creamy Mushroom Sauce

Roast Head of Cauliflower in Creamy Mushroom Sauce
Looking for a tasty side dish for a special dinner? I've got you covered with this roast head of cauliflower in creamy mushroom sauce which really presents well when you place the whole head of cauliflower on the table and then slice into it to serve! Roasting cauliflower really brings out its flavour and it works just as well roasting the entire head of cauliflower as it does with roasting the florets! Once you have roasted your cauliflower you can dress it up in any number of ways and my favourite way is to top it with a creamy mushroom sauce that is just bursting with flavour! You can easily whip up the mushroom sauce while the cauliflower is roasting and when it's done you are ready to enjoy! Chicken Noodle Soup

Chicken Noodle Soup
Chicken noodle soup has to be the definition of comfort food, especially on a cold winter day and it is super easy to make at home from scratch! A flavourful homemade chicken broth or chicken stock is essential for a tasty chicken noodle soup and both are easy to make! Once you have your chicken broth or stock ready chicken noodle soup does not take too long to make where you are just cooking the vegetables followed by adding the broth or stock, chicken, seasoning and finally the noodles. At this point you have a pretty tasty chicken noodle soup but I like to add a few extras to make it even tastier! A while ago I figured out that you can enhance a chicken broth or stock by adding a parmesan rind while it simmers and why not do the same for chicken noodle soup? Since the chicken noodle soup is not simmering for a long time to bring the flavour out of the rind, I like to add some finely grated parmesan to the soup and let it melt in and disappear. I am a big fan of miso soup and I have found that miso works very well in a lot of soups including chicken noodle soup! Finally, I like to hit the chicken noodle soup with a splash of lemon brighten it up and add some freshness.

Jalapeno Popper Potato Gratin

Jalapeno Popper Potato Gratin
It's always nice to have some fun with side dishes like taking a favourite snack like jalapeno poppers and turning it into a side dish and I did that here with this jalapeno popper potato gratin! What could be better than jalapeno poppers for dinner in the form of a potato gratin? This side is pretty easy to make starting with sliced potatoes, a cheddar cheese and cream cheese cheese sauce (Did you notice the number of times that I said cheese there?), crispy bacon and of course jalapenos that are layered up, topped with even more cheese and then baked until the potatoes are nice and tender and jalapeno popper-y good! This jalapeno popper potato gratin takes a bit of time to make but you can assemble it the day before and bake it when ready or you could bake it the day before and just reheat it when ready to save time when you are making a large meal. Who ever said you can't have jalapeno poppers for dinner has not tried this jalapeno popper potato gratin! Forget dessert, grab jalapeno popper potato gratin seconds, take it to the couch and chow down when you get back to watching the game after dinner!

Greek Salad (Horiatiki Salata)

Greek Salad (Horiatiki Salata)
This is a more traditional Greek salad, one without lettuce, that typically consists of tomatoes, cucumbers, onions, peppers, olives, feta, olive oil, oregano and sometime a splash of red wine vinegar. This salad is super easy to make where you basically just need to slice the veggies and you are good to go! The feta is commonly served as a big slab on top of the salad but you can also serve it with the feta crumbled. This salad makes for a great side or even a light meal and it's perfect in the summer with all of the field ripened veggies around!

Greek Goddess Grain Bowl with Fried Zucchini, Halloumi and Toasted Seeds

Greek Goddess Grain Bowl with Fried Zucchini, Halloumi and Toasted Seeds
When I came across this recipe for a Greek goddess grain bowl with fried zucchini, halloumi and toasted seeds on Half Baked Harvest I knew that I just had to make it, I mean it has so many of my favourite Greek/Mediterranean flavours in it! This recipe includes plenty of tasty ingredients but the stars of the show are the crispy fried zucchini, fried halloumi cheese (a Mediterranean cheese that holds it shape when fried and 'squeaks' when you chew it) crunchy toasted seeds and a fresh basil and lemon tahini dressing! Other ingredients in this salad include, crunchy cucumbers, juicy tomatoes, salty kalamata olives, sweet and smoky roasted red pepper, artichoke heart, cool and creamy avocado and fresh herbs like basil and mint. This salad is amazing with it's wide variety of different flavours, textures and even temperatures with the hot crispy fried zucchini and they all work so well together, especially in that tasty basil and lemon tahini dressing!

Mexican Street Corn Style Grilled Zucchini

Mexican Street Corn Style Grilled Zucchini
It's the middle of summer which means that zucchini is everywhere and I am always looking for tasty new ways to enjoy it! The other day I was thinking about one of my favourite summer foods, elote or Mexican street corn, which is corn on the cob that is slathered in butter and mayonnaise and sprinkled with cheese (cotija or queso freso or feta or parmesan, etc.), cayenne, lime juice and cilantro and that lead me to the notion of serving some grilled zucchini up with the same toppings! So the basic idea was to quarter some zucchini into sticks, grill it, toss it in a mixture of butter and mayo and the sprinkle on some cheese, cayenne, lime juice and cilantro! This Mexican street corn style grilled zucchini could not be easier to make and the flavour combo of the toppings is just as fabulous on grilled zucchini as it is on corn! What a great new way to enjoy some zucchini and it's the perfect side dish for any summer meal!

Cuban Black Beans and Rice (Moros y Cristianos)

Cuban Black Beans and Rice (Moros y Cristianos)
On the weekend, when I made the Cuban roast pork, lechon asado, I served it with some Cuban style black beans and rice make it a complete meal. Many different cultures seem to have their own version of a beans and rice dish and moros y cristianos, black beans and rice, is the Cuban version. This dish is really easy to make and it generally consists of onions, peppers, garlic and oregano that is simmered with the black beans, infusing the dish with some amazing aromas. Everything is simmered low and slow to let the flavours develop and it is cooked until the beans get tender and start to break apart making for one tasty and creamy dish. Dried black beans are commonly used for this dish but this version is a quicker one that uses canned beans making it a little easier to make, which is especially nice when making a large meal. These Cuban style black beans are tasty and satisfying enough to make for a complete meal all by themselves or they can be served as a side dish as I did when I served them with the lechon asado. This bean and rice recipe is definitely one to keep on hand for when looking for a light, healthy and tasty dish!

Green Bean, Mushroom and Caramelized Onion Tart

Green Bean and Mushroom Tart
Simple sauteed green beans, mushrooms and onions has to be one of my favourite side dishes but it is always nice to change things up and to use that fabulous combo in other dishes! I recently came across the idea of using the combo in a green bean and mushroom tart on A Spicy Persective and of course I just had to try it. I have been enjoying the ease and simplicity of puff pastry tarts for a while now and you really cannot get much easier that rolling out some puff pastry, topping it with your favourite toppings and baking it for a few minutes in the oven! For this particular tart we are topping it with blanched green beans and caramelized mushrooms and onions. Of course it is always nice to have something on your tart to hep the other ingredients stick to it as you eat and some blue cheese works wonderfully well with green beans and mushrooms on this tart!

Garlic Mashed Cauliflower

Garlic Mashed Cauliflower
For my pan seared chicken breasts in a mushroom, tarragon and mustard pan saucedinner I want to serve it on top of something that could soak up all of that amazingly tasty sauce! One of the first things that normally comes to mind at times like this is mashed potatoes but I have really been into cauliflower lately and I have been wanting to try mashed cauliflower for a while! The mashed cauliflower is pretty much the same as mashed potatoes except that it is made with cauliflower instead of ptoatoes. You pretty much just steam the cauliflower until tender, mash it and mix in seasonings and flavours of choice. Since the sauce was the star of the show for my dinner, I wanted some pretty basic mashed cauliflower with little or no flavour to overpower the sauce so I went with a basic garlic mashed cauliflower with butter, sour cream, salt and pepper and a touch of miso paste for umami. Really you could mix in whatever flavours you wanted and you could easily do any mashed potato recipe with mashed cauliflower. I am already thinking about an aged white cheddar mashed cauliflower for next time!
