Creamy Garlic and Brie Mushrooms
Mushrooms are one of my favourite foods and although I am perfectly happy with simple mushrooms sautéed in butter and garlic it's always nice to change things up! These creamy garlic and brie mushrooms are one of the tastiest ways that I have come up with for enjoying some basic button mushrooms as a quick and easy dish that is a great side for any meal (or just devouring by the bowlful!). The recipe could not be simpler, you cook the button mushrooms, whole, in butter until they are nice and tender and they have released their liquids before adding the garlic and then creating the creamy sauce with a combination of broth and brie cheese! Finish everything off with some salt and pepper along with an optional garnish of parsley and you have a tasty mushroom side dish that is ready to be inhaled from the table before you can blink!

Mushrooms have to be one of my favourite foods and they make for some of the best side dishes like these roasted mushrooms in a browned butter, garlic and thyme sauce! This recipe is super easy, you just roast the mushrooms, brown some butter, throw in the garlic and thyme and then toss the roasted mushrooms in the sauce! You really can't go wrong with mushrooms, garlic and butter and browning the butter only makes things better with the slightly nutty flavour and aroma that comes from browning it. These roasted mushrooms in a browned butter, garlic and thyme sauce are a great side for any meal!

Are you ready for another side dish for your Easter dinner? How about this tasty grilled asparagus with carrot ginger dressing? With spring here, even though it's still chilly here, there is asparagus from down south available and I could not resist picking some up to make this dish! This asparagus recipe is so easy, you just cook the asparagus (I like to grill it to get that slightly charred and smoky flavour) and serve it topped with the carrot-ginger dressing which is inspired by the carrot ginger dressing that you stereotypically find in Japanese restaurants. The defining characteristics of the carrot dressing are of course the carrot and ginger flavours complemented by the tangy rice vinegar and the absolutely amazing aromatics from the toasted sesame oil. With the combination of the spring asparagus and the Easter carrots this grilled asparagus with carrot ginger dressing is a perfect side dish for your Easter dinner! I hope the Easter bunny does not get upset that we turned his carrots into a dressing!

Easter is right around the corner and boy do I have a side dish recipe for you! These tasty maple roasted carrots in tahini sauce with pomegranate and pistachios will blow your mind! The carrots are tossed in maple syrup and roasted until tender before being topped with a creamy tahini sauce along with pomegranate and pistachios to add both colour and texture. The tahini sauce is nice and creamy with a little lemon citrus bite, sweet maple syrup and salty miso paste (or soy sauce). The pomegranate adds bursts of juiciness in addition to the jewel like radiant red colour and the pistachios add that crunchy texture along with the vibrant green colour! When everything is combined into this maple roasted carrots in tahini sauce with pomegranate and pistachios you get one truly amazing side dish that is perfect for your Easter dinner, or any other meal for that matter!

I was at a Venezuelan restaurant recently and I ordered the black bean and chorizo soup, since I always enjoy a tasty bean soup. I was expecting to get a more Mexican style spicy soup but to my surprise the first bite was slightly sweet with hints of molasses and that took me back for a second. Then I took a second bite, this one including a piece of the spicy cured chorizo sausage, and I was amazed at how well the combination of the slightly sweet black bean soup worked with the spicy chorizo sausage! Of course I knew that I would have to try making the soup at home! :)

The recipe pretty much wrote itself, being a standard black bean and chorizo soup with the addition of molasses and a bit of brown sugar to sweeten it; I know that there is a special kind of sugar that is traditionally used but since I could not find it here I made some simple substitutions. The resulting homemade version was phenomenal! I am still a little surprised at how well the slightly sweet and spicy combo works so well in a black bean soup like this but this is definitely my new favourite soup!

Lemon Chicken Orzo Soup
With the colder weather I have been thinking about soups more and I thought that I would start out with this nice and hearty, light and bright lemon chicken orzo soup. This soup is essentially a take on a chicken noodle soup using orzo as the 'noodle' and it emphasizes brightness by the use of lemon juice and zest along with plenty of fresh parsley. In addition, I like to add a touch of thyme for some earthiness and a bit of tarragon which perfectly complements the bright flavours of the soup and adds a hint of the exotic with its anise-y and vanilla-y undertones! This soup is pure comfort food that is absolutely amazing on a cold winter day, it's hot, filling and it adds a bit of summery sunshine to your day! What's even better is that it takes less than 30 minutes to make and it will fit into your New Year's diet resolutions!
