Thai Peanut Chicken Avocado Burritos

After teasing you a while ago with photos of these tasty Thai style peanut chicken and avocado burritos on Instagram, I finally bring you the recipe and it was well worth the wait! (I often post previews of upcoming recipes on Instagram so follow Closet Cooking on Instagram to see what's coming!) These burritos were inspired by the thai peanut chicken saute that I made recently and I could not help but think that succulent chicken would be simply divine in grilled burritos along with cool and creamy avocados and of course the tasty spicy Thai peanut sauce not to mention plenty of ooey gooey melted cheese! Oh my! If you are starting off with already cooked chicken and you have the peanut sauce made (or store bought) then these burritos come together in no time flat making for quick and easy meals or even midnight snacks! :) I hope that you enjoy these peanut chicken and avocado burritos as much as I do; my only recommendation would be to make a double batch because if you are like me you will practically inhale them!

Thai Peanut Pumpkin Turkey Curry

Thai Peanut Pumpkin Turkey Curry
Pumpkin is always fun to use in savoury dishes and I really enjoy using it with Thai flavours like in this Thai style curry! I start the curry out with a base of the red curry paste and add to that the standard ingredients for a Thai curry including the coconut milk, fish sauce, lime juice and sugar to create a nice balance of sweet, salty, spicy and sour. Up next is some peanut butter which is so amazingly good with both the red curry paste and the pumpkin and it makes the curry nice and creamy. The pumpkin comes in the forms of both pumpkin puree and diced pumpkin for maximum flavour and texture! This curry continues with the fall flavours using turkey as the meat adding pureed apples to the sauce and some dried cranberries just for the fun of it! This fall harvest Thai style peanut pumpkin turkey curry is the perfect way to enjoy the bounty of the harvest!

Coconut Shrimp with Sweet Chili Sauce

After rounding up my tastiest shrimp recipes I realized that I had not shared one of my favourites, coconut shrimp! Coconut shrimp are large shrimp served coated in a crispy golden brown panko breadcrumb and coconut mixture that are just asking to be dipped into some sweet chili sauce or better yet pineapple sweet chili sauce! I sometimes like to add a touch of lime zest to the breadcrumb mixture for a hint of citrus and you can always kick up the sweet chili sauce with something like apricot preserves if the pineapple sweet chili sauce does not float your boat. (I think the coconut and pineapple flavour combo is just fabulous!) This coconut lime shrimp is the perfect finger food for your next dinner party, it's also great on game night and to be completely honest, I like to make a large batch and just eat it as a meal!

I have been a huge fan of roasted cauliflower ever since I first tried it! There is just something about roasted cauliflower... roasting it takes something that is pretty boring and transforms it into something that is extraordinary. Even in it's simplest form, tossed in olive oil with salt and pepper, it is ridiculously addictive and I could easily chow down on a bowl of it rather than popcorn while watching a movie. The only real question is, why stop with salt and pepper when you could add any number of flavours or seasonings to the roasted cauliflower? Buffalo roasted cauliflower as to be one of my current favourites but I have plenty of ideas for roasted cauliflower starting with this chicken satay inspired one. The basic idea behind this roasted cauliflower was to marinate the cauliflower in a satay style marinade, roast it and then serve it with a Thai style spicy peanut sauce for dipping. I was a little worried that marinating the cauliflower might cause problems with roasting but it works quite well with the cauliflower absorbing a lot of the marinades flavour and it still roasts up perfectly. This satay roasted cauliflower is super tasty all by itself but the peanut sauce takes it to a whole new level of amazingness!

Pad Thai Soup

I am a totally addicted to Pad Thai, a super tasty stir-fried noodle dish, so when I came across the idea of a pad Thai soup on Domestic Fits I just had to make my own! At its base pad Thai contains rice, noodles that are stir-fried with an egg, meat commonly shrimp and/or chicken and bean sprouts and it is garnished with cilantro, peanuts, green onions and lime juice. Pad Thai gets it flavour from a tasty sauce that is made with tamarind, fish sauce, sugar and chilies creating an amazing balance of sour, salty, sweet and spicy! With these things in mind I started the soup off with chicken broth that I simmered with the shrimps shells to impart their flavour to it. I then added all of the ingredients from the pad Thai sauce, the tamarind, fish sauce, sugar and chilies, to form a tasty broth for the soup. Next up I added some shiitake mushrooms which are also good in pad Thai along with the noodles and bean sprouts to fill out the soup. That left the egg which is great in fried rice or fried noodle dishes like pad Thai and since I love the texture that an egg adds to egg drop soup I decided to add the egg in that fashion. With the soup done, all that was left was to garnish it with cilantro, peanuts, chilies, lime juice and optionally some fried shallots and enjoy it!

Sweet Chili Chicken Salad

Sweet Chili Chicken Salad
Armed with my shiny new sweet chili dressing it was time to use it and it only seemed natural to use it in a chicken salad since the idea came when I was enjoying a chicken satay salad in spicy peanut dressing . I decided to go with a lettuce base for this salad and then I filled it out with some ingredients that I commonly use in Thai style dishes including bean sprouts, carrots, red peppers and cucumbers. Next up is the chicken and to make things easy I used shredded chicken so you can use any leftover chicken that you may have. The salad is then garnished with chopped peanuts, sliced chilies and some fresh herbs including one or more of the following: cilantro, mint and Thai basil. I have to say that the resulting salad has to one of the best that I have had in a while! It is so fresh, juicy, crunchy and full of flavour provided by the amazing sweet chili dressing ! One thing that I noticed is that the dressing clings to the chicken nicely ensuring that the chicken in nice and moist and very tasty!

Spicy Peanut Chicken Tacos

Spicy Peanut Chicken Tacos
I am kind of obsessed with tacos and I am always experimenting with different ingredients in them so when I made the slow cooker shredded spicy peanut chicken for the spicy peanut chicken rice bowls I naturally though about using it in tacos. One of the great things about tacos is how flexible they are! At their base they are of course tortillas filled with things and I sometimes like to think of them as having a main ingredient such as a meat with one or more accompanying ingredients that are there complement and contrast the main filling. Up next is a salsa or a sauce and finally some herbs and maybe a splash of lime juice to finish things off. With the meat having already been chosen for these tacos as the slow cooker shredded spicy peanut chicken and the 'salsa' as the spicy peanut sauce that left the other accompanying ingredients. I was sure that creamy avocados would go perfectly with the spicy peanut sauce and chicken and that some sweet and tangy onions would complement them all nicely. These tacos would not be complete with some Thai inspired herbs including cilantro, basil and mint and a garnish of chopped peanuts and some extra heat from some birds eye chili were a must.
