Got leftover corned beef from St Patrick's Day? How about some reuben boxty? Boxty are Irish style potato pancakes that are great when you top them with or fold them over something, in this case all of the flavours of a reuben sandwich including corned beef, sauerkraut, swiss cheese and either russian or thousand island dressing. These reuben boxty are super quick and easy to make and I like to take the extra few minutes that it takes to throw them under the broiler, just before adding the dressing, to melt the cheese! What a great way to enjoy some corned beef!
