Today is Cinco de Mayo and I wanted to take the opportunity to update one of my favourite recipes, this bacon wrapped jalapeno popper stuffed chicken with some new photos! The basic idea was to stuff chicken with all of the flavours of jalapeno poppers and then to wrap them in bacon and grill, fry or bake them. Jalapeno poppers are commonly filled with cream cheese and/or cheddar cheese and they are either coated in bread crumbs and fried until crispy or wrapped in bacon and grilled or baked until the bacon is cooked. I like a simple mixture of cream cheese, cheddar or monterey jack cheese and diced jalapeno peppers for the filling and the jalapenos can be roasted, fresh or even pickled. These bacon wrapped jalapeno popper stuffed chicken tastes just like jalapeno poppers and makes for one really tasty light meal! Who says you can't have your favourite game day snacks for dinner any night of the week?

Tomorrow is Cinco de May and these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs are a great way to kick off the celebrations! The idea here is that you take some cooked potatoes and smash them down into pancake like discs, brush them with oil and bake them until the are nice and golden brown, crispy and all sorts of good! I give them a "Mexican" kick by topping them with plenty of melted cheddar cheese, guacamole, crispy bacon, a fried egg with a runny yolk and finally a fresh tomato salsa, aka pico de gallo! There are just so many amazing flavours going on in these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs which are great for breakfast lunch or dinner!

Looking for one last recipe idea for St Patrick's Day? I've got a great one for you! Bacon and cheese corned beef burgers with guinness caramelized onions and a fried egg! Instead of throwing all of your corned beef into the pot or slow cooker today, set some of it aside to grind up in your food processor and use it to make some really tasty burgers! Now you could easily go with the standard reuben sandwich flavours for corned beef burgers but this is my favourite way to dress them up, with bacon, cheese and Guinness caramelized onions along with a fried egg; because everything is better with a runny egg yolk! These bacon and cheese corned beef burgers with guinness caramelized onions and a fried eggs are now my new number one burger! Yum!

With St Patrick's Day coming up I have been thinking about recipes and of course recipes with an Irish beer like Guinness come to mind and it's the perfect base for a beef stew! This steak stew is a pretty basic beef stew with some of the beef broth replaced with Guinness for extra flavour! I also like to season the stew with thyme, Worcestershire sauce, tomato paste and a hit of fish sauce for that extra depth of flavour! This steak and guinness stew is amazing all by itself but I often like to top it with cheese, Irish white cheddar cheese of course, and alternatively mashed potatoes, almost like a shepherds pie! This time I was thinking why not combine the two for a steak and Guinness stew topped with irish white cheddar mash and instead of using potatoes I used cauliflower to keep things light! Whether you serve this steak and Guinness stew by itself or topped with the Irish white cheddar cauliflower mash, it's a great choice for your St Patrick's Day menu!

While I was thinking about snacks for the upcoming game day party I got a bit nostalgic about two of my favourite finger foods, buffalo chicken wings and jalapeno poppers, and I had a brilliant idea, why not combine them in the form of jalapeno popper stuffed buffalo chicken meatballs? I started out with a base of ground chicken for the chicken wing theme to which I mixed in finely diced carrots and celery, which are commonly served with wings, along with onions and garlic. I then moved onto the jalapeno popper side of things and combined chopped up jalapenos with poppers common fillings, cream cheese and cheddar cheese, along with some bacon for good measure. I then wrapped the chicken mixture around the cheese mixture, forming meatballs which I then baked in the oven until cooked and lightly golden brown before tossing them in the buffalo chicken hot sauce! Yum! Up next was a garnish of ranch dressing and a bit of crumbled blue cheese to finish things off! Biting into these meatballs is like a dream come true! It starts with a hit of buffalo chicken which bursts apart releasing a spray of ooey gooey melted cheese along with spicy jalapenos and bacon! Game day just couldn't get any better then this!

If you can put nuts, raisins and even chocolate in butter tarts then why not my absolute favourite food, bacon? It was that idle thought that led to these bacon and pecan butter tarts and I have to say that the sweet and salty combo is amazingly fantastic in them! In addition to the sweet and salty aspects the bacon adds a nice subtle hint of smokiness to the tarts which makes them that much better! If you are a fan of bacon and butter tarts or pecan pie then you just have to try these bacon and pecan butter tarts!

Maple Candied Bacon

Over the holidays I like to give homemade treats as gifts and although my favourite gift is the maple bacon jam this candied bacon is a close second! Candied bacon is essentially bacon that is coated in sugar(s), in this case maple syrup and brown sugar, and roasted until the bacon is cooked and the sugars melt and form a sweet coating wrapped around the crispy and salty bacon! When I was a kid and went camping one of my favourite breakfasts to help out making was pancakes and bacon because I could pour some maple syrup into the pan while I was cooking the bacon and it would coat the bacon and caramelize on it creating this amazing combination of sweet and salty in the crispy bacon and this candied bacon is pretty much the same idea! Once the bacon is coked and crispy it's the perfect gift Bacon-mas, I mean Christmas! (Assuming that you can resist eating it all yourself!... My precioussss...)

Bacon Gingersnap Cookies

As I was settling down for some holiday cookie baking, including my favourite gingersnap cookies, I came across the idea for bacon gingersnap cookies on Kevin is Cooking and given my bacon addiction it was pretty much a given that I would be making some! The bacon is added to the gingersnap cookies by replacing the butter with rendered bacon fat so I took my gingersnap cookie recipe and did just that! Now I know that this might seem a little strange at first but I have tried similar things in the past including making bacon chocolate chip cookies and bacon maple shortbread by adding bacon pieces to both and they are amazingly good! By using bacon fat rather than adding pieces of bacon you add that bacon umami flavour which takes these gingersnap cookies way over the edge and most people would not be able to say that they knew that there was bacon in them if you don't tell them first. When you get to making your gingersnap cookies this year, try making one batch with bacon fat instead of butter! What a great way to add a little bacon to your holiday cheer!

I am always on the lookout for easy side dishes and when I came across this one for slow cooker cheesy bacon ranch potatoes on damn delicious I knew that I had a winner! As soon as I see slow cooker in the name I pretty much know that it's going to be nice and easy and throw in the words potatoes, ranch, cheese and bacon and you definitely have my interest! I especially like the fact that these potatoes are made in the slow cooker because for large dinners, like Thanksgiving dinners, there tends to be a lot of things that need oven time so doing some in the slow cooker is perfect! These potatoes could not be easier to make, you simply dice the potatoes, toss the in a powdered ranch dressing mix, layer them into the slow cooker along with the cheese and bacon, cook all day and they are ready just in time for dinner! If you are looking for an easy side dish for dinner it's hard to beat these cheesy slow cooker bacon ranch potatoes!

Ever since I first made the cauliflower pizza crust I have enjoyed experimenting with different vegetable based pizza crusts and up next I have a broccoli pizza crust! This pizza crust is made from grated broccoli that is cooked, squeezed dry and mixed with cheese and an egg as binders and baked until golden brown before being topped with your favourite pizza toppings and baked until the cheese is nice and bubbling and good! With the broccoli in the pizza crust I could not help but think of a loaded baked potato, which always benefits from the addition of broccoli, with a sour cream 'pizza sauce', cheddar cheese, bacon and green onions! This broccoli pizza crust is just as amazing as the cauliflower version and if you like the colour green then this pizza is for you especially when loaded up with the baked potato flavours!

Are you looking for a tasty side dish for an important meal? Boy do I have one for you! These maple glazed bacon wrapped roasted carrots are super easy to make and oh so good! The sweet and salty combo of the sweet roasted carrots and maple syrup and the salty bacon wrapping is simply divine! Not only are they my current favourite side dish but these maple glazed bacon wrapped roasted carrots are so easy to make, you just wrap the carrots up in bacon and roast them until the bacon is crispy and the carrots are nice and tender, glazing them with maple syrup as they roast! If you are making a large dinner where oven space and time is limited, like mine often is, you can also 'roast' them in a skillet! It's always nice to have some fun with side dishes like taking a favourite snack like jalapeno poppers and turning it into a side dish and I did that here with this jalapeno popper potato gratin! What could be better than jalapeno poppers for dinner in the form of a potato gratin? This side is pretty easy to make starting with sliced potatoes, a cheddar cheese and cream cheese cheese sauce (Did you notice the number of times that I said cheese there?), crispy bacon and of course jalapenos that are layered up, topped with even more cheese and then baked until the potatoes are nice and tender and jalapeno popper-y good! This jalapeno popper potato gratin takes a bit of time to make but you can assemble it the day before and bake it when ready or you could bake it the day before and just reheat it when ready to save time when you are making a large meal. Who ever said you can't have jalapeno poppers for dinner has not tried this jalapeno popper potato gratin! Forget dessert, grab jalapeno popper potato gratin seconds, take it to the couch and chow down when you get back to watching the game after dinner!

Although the weather is cooling summer is not quite over yet and I wanted to send it off with a bang with these summery caprese BLT balsamic roasted portobello mushrooms! One of my favourite things in summer is the fresh field ripened tomatoes and I always enjoy them in BLTs! I was thinking about taking this idea and combining them with another favourite food, mushrooms, and so the idea of a portobello mushroom BLT got stuck in my head. The basic idea was a BLT with roasted portobello mushrooms as the bread and either using a second mushroom cap to make a sandwich or just using one and going with an open-faced sandwich. Instead of going with a plain portobello mushroom I decided to add some flavour by marinating the mushrooms in a tasty balsamic vinaigrette before roasting (or grilling) them until tender. Next up was some bacon, basil leaves (as the lettuce) and tomato to give one amazing portobello BLT but I could not help but keep going by adding some summery fresh basil pesto! That got me thinking about a caprese salad so I added some mozzarella and a balsamic drizzle taking this mushroom sandwich way over the top! These caprese BLT balsamic roasted portobello mushrooms are just packed with flavour and they are a great way to celebrate the end of summer!

This salad is a texmex themed salad with taco lime grilled chicken, grilled corn, black beans, tomatoes, avocado and bacon in a creamy avocado salsa verde dressing! This salad does not take much time to make, you just need to grill the chicken, cook the bacon, assemble the salad and toss it in a dressing and if you grill the chicken and cook the bacon ahead of time it gets even easier! There are so many amazing flavours packed into this salad that work so well together and it is definitely calling my name! I can't believe that summer is going by so quickly! This weekend is the last long weekend of the summer and it's a great opportunity to get outdoors and enjoy the warm weather while it lasts! If you are planning on having a picnic, throwing a party of having a get together do I ever have a tasty dish for you, an avocado BLT pasta salad! This pasta salad is inspired by the BLT, a bacon, lettuce and tomato sandwich, which only gets better with avocado so this pasta salad contains all of those ingredients along with pasta. Instead of going with regular lettuce I decided to go with baby spinach but otherwise the ingredients are the standard bacon, tomato and avocado. I don't think that you can ever have too much avocado so I went with my favourite creamy guacamole dressing which is a guacamole themed dressing with buttermilk that is so creamy and good! No matter what you're doing this weekend, this quick and easy avocado BLT pasta salad would be a perfect addition to your day!

Up next for grilled cheese month I bring you a grilled cheese sandwich inspired by caramel apples! That combo of tart juicy apples with sweet caramel sauce is simply irresistible and the the sweet and savoury apple and cheddar combo is not too far behind so why not combine the two? This sandwich is really easy to make, simply combining cheddar cheese, sliced apples and caramel saucein a grilled cheese! The one caveat about this sandwich is that fresh apple slices tend to pop out of it when you eat it but you can alleviate this by sauteing the apples a bit to tenderize them first. It really comes down to whether you prefer the crisp apples or the ease of eating the sandwich but either way you are in apple, caramel and ooey gooey melted cheddar heaven. Although the caramel apple grilled cheese sandwich is amazing all by itself, you can make it even more decadent by adding bacon; where the salty bacon balances the tart apple and sweet caramel sauce nicely.

It is hard to think about Easter without thinking about eggs and deviled eggs are a great way to include some eggs in your Easter menu. Deviled eggsare hard boiled eggs that are served cut in half and stuffed with a mixture that typically includes the egg yolk along with some mayonnaise, mustard and a touch of hot sauce or a garnish of chili powder. Although your basic deviled eggs are great all by themselves you do not have to stick with the basic filling; you can go crazy with the flavours and one of my favourite ways to stuff them is with guacamole! You cannot go wrong combining two already amazing things like eggs and guacamole in a new dish like guacamole deviled eggs! As good as the guacamole deviled eggs sound I could hardly resist stopping there and I had to throw in another amazing ingredient, bacon! Bacon and eggs is a match made in heaven and bacon and avocado is not far behind so why not combine them all in bacon guacamole deviled eggs? No matter how you cut it, these bacon guacamole deviled eggs are bound to be a hit at your Easter gathering!

The other day I noticed some brussels sprouts looking rather lonely in the grocery store and that made me realize that with winter coming to an end they would be disappearing soon. Brussels sprouts have to be one of my favourite winter vegetables and despite the fact that I really had not done much with them this winter I always have plenty of ideas with how to enjoy them including this carbonara pasta. Carbonara pasta is an Italian pasta dish that consists of egg yolk, cheese, bacon and plenty of fresh cracked black pepper and I always enjoy throwing a seasonal vegetable like brussels sprouts in the mix to keep things new and interesting and to make it a bit healthier. Although you could steam the brussels sprouts, I prefer to roast them to bring out their flavour and they go perfectly well with the bacon in the creamy egg yolk and cheese carabonara sauce! On of the great things about this pasta is how quick and easy it is to make, taking only as long as it takes to roast the brussels sprouts to pull together making it a great light meal for a weeknight.

This year St Patrick's Day is on a Sunday and that means cutting back on the amount of Irish ales, stouts and whiskies in the evening but it also provides the opportunity to do some more cooking in the spirit of the day, starting with breakfast! Guinness and chocolate are a perfect match and I was thinking that some Guinness chocolate pancakes would be a great way to kick off St Patrick's day! For the recipe, I pretty much took my standard chocolate pancake recipe and replaced the milk with Guinness. I made the pancakes small so that I could make a nice stack of them as if they were Guinness in a glass and I topped them off with a frothy head of whipped cream. Instead of using regular pancake syrup or even maple syrup I decided to kick up the chocolate and Guinness flavours with a Guinness and chocolate syrup! You know me too well; I could not stop there, I just had to add some crumbled bacon to the pancake batter to give the chocolate pancakes a saltiness to play off of their sweetness. (The bacon is of course completely optional and should be omitted for the vegetarian version.) You are sure to get your St Patrick's Day celebrations off to a good start with these totally amazing bacon Guinness chocolate pancakes with a frothy whipped cream head and Guinness chocolate syrup!

Cuban Sandwich

At the beginning of the week I had plenty of freshly minted leftover Cuban roast pork (lechon asado) and of course the first thing that I thought to use it in was a sandwich, a Cuban sandwich in particular. The Cuban sandwich , popularized in Florida, consists of roast pork, ham, swiss cheese, yellow mustard and pickles and it is generally 'pressed' when grilled. As luck planning would have it, I also just happened to also have some roast ham on hand so I was all set to make some Cuban sandwiches! These sandwiches are really easy to make, you pretty much just assemble the sandwich and grill it in a panini press. (I don't have a panini press so I just used a grill pan and 'pressed' down on the sandwich with a mixing bowl.) Despite being so simple, the Cuban sandwich is packed full of flavour and all of the flavours work so well together! The Cuban sandwich works particularly well with the lechon asado that has been marinated in the sour orange and garlic mojo and if you have any extra mojo on hand, throw some into the sandwich or dip your sandwich into it for even more kick! If you are using lechon asado for your roast pork and if you had any crackling, add some to the sandwich for a tasty crunchy texture! These sandwiches certainly are a great way to enjoy some of the leftover Cuban roast pork (lechon asado) !
