Today is Cinco de Mayo and I wanted to take the opportunity to update one of my favourite recipes, this bacon wrapped jalapeno popper stuffed chicken with some new photos! The basic idea was to stuff chicken with all of the flavours of jalapeno poppers and then to wrap them in bacon and grill, fry or bake them. Jalapeno poppers are commonly filled with cream cheese and/or cheddar cheese and they are either coated in bread crumbs and fried until crispy or wrapped in bacon and grilled or baked until the bacon is cooked. I like a simple mixture of cream cheese, cheddar or monterey jack cheese and diced jalapeno peppers for the filling and the jalapenos can be roasted, fresh or even pickled. These bacon wrapped jalapeno popper stuffed chicken tastes just like jalapeno poppers and makes for one really tasty light meal! Who says you can't have your favourite game day snacks for dinner any night of the week?

Tomorrow is Cinco de May and these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs are a great way to kick off the celebrations! The idea here is that you take some cooked potatoes and smash them down into pancake like discs, brush them with oil and bake them until the are nice and golden brown, crispy and all sorts of good! I give them a "Mexican" kick by topping them with plenty of melted cheddar cheese, guacamole, crispy bacon, a fried egg with a runny yolk and finally a fresh tomato salsa, aka pico de gallo! There are just so many amazing flavours going on in these crispy smashed potato pancakes with guacamole, pico de gallo, bacon and eggs which are great for breakfast lunch or dinner!

Looking for one last recipe idea for St Patrick's Day? I've got a great one for you! Bacon and cheese corned beef burgers with guinness caramelized onions and a fried egg! Instead of throwing all of your corned beef into the pot or slow cooker today, set some of it aside to grind up in your food processor and use it to make some really tasty burgers! Now you could easily go with the standard reuben sandwich flavours for corned beef burgers but this is my favourite way to dress them up, with bacon, cheese and Guinness caramelized onions along with a fried egg; because everything is better with a runny egg yolk! These bacon and cheese corned beef burgers with guinness caramelized onions and a fried eggs are now my new number one burger! Yum!

With St Patrick's Day coming up I have been thinking about recipes and of course recipes with an Irish beer like Guinness come to mind and it's the perfect base for a beef stew! This steak stew is a pretty basic beef stew with some of the beef broth replaced with Guinness for extra flavour! I also like to season the stew with thyme, Worcestershire sauce, tomato paste and a hit of fish sauce for that extra depth of flavour! This steak and guinness stew is amazing all by itself but I often like to top it with cheese, Irish white cheddar cheese of course, and alternatively mashed potatoes, almost like a shepherds pie! This time I was thinking why not combine the two for a steak and Guinness stew topped with irish white cheddar mash and instead of using potatoes I used cauliflower to keep things light! Whether you serve this steak and Guinness stew by itself or topped with the Irish white cheddar cauliflower mash, it's a great choice for your St Patrick's Day menu!

While I was thinking about snacks for the upcoming game day party I got a bit nostalgic about two of my favourite finger foods, buffalo chicken wings and jalapeno poppers, and I had a brilliant idea, why not combine them in the form of jalapeno popper stuffed buffalo chicken meatballs? I started out with a base of ground chicken for the chicken wing theme to which I mixed in finely diced carrots and celery, which are commonly served with wings, along with onions and garlic. I then moved onto the jalapeno popper side of things and combined chopped up jalapenos with poppers common fillings, cream cheese and cheddar cheese, along with some bacon for good measure. I then wrapped the chicken mixture around the cheese mixture, forming meatballs which I then baked in the oven until cooked and lightly golden brown before tossing them in the buffalo chicken hot sauce! Yum! Up next was a garnish of ranch dressing and a bit of crumbled blue cheese to finish things off! Biting into these meatballs is like a dream come true! It starts with a hit of buffalo chicken which bursts apart releasing a spray of ooey gooey melted cheese along with spicy jalapenos and bacon! Game day just couldn't get any better then this!

If you can put nuts, raisins and even chocolate in butter tarts then why not my absolute favourite food, bacon? It was that idle thought that led to these bacon and pecan butter tarts and I have to say that the sweet and salty combo is amazingly fantastic in them! In addition to the sweet and salty aspects the bacon adds a nice subtle hint of smokiness to the tarts which makes them that much better! If you are a fan of bacon and butter tarts or pecan pie then you just have to try these bacon and pecan butter tarts!

Maple Candied Bacon

Over the holidays I like to give homemade treats as gifts and although my favourite gift is the maple bacon jam this candied bacon is a close second! Candied bacon is essentially bacon that is coated in sugar(s), in this case maple syrup and brown sugar, and roasted until the bacon is cooked and the sugars melt and form a sweet coating wrapped around the crispy and salty bacon! When I was a kid and went camping one of my favourite breakfasts to help out making was pancakes and bacon because I could pour some maple syrup into the pan while I was cooking the bacon and it would coat the bacon and caramelize on it creating this amazing combination of sweet and salty in the crispy bacon and this candied bacon is pretty much the same idea! Once the bacon is coked and crispy it's the perfect gift Bacon-mas, I mean Christmas! (Assuming that you can resist eating it all yourself!... My precioussss...)
