Htipiti (Greek Roasted Red Pepper and Feta Cheese Dip)

Htipiti (Greek Roasted Red Pepper and Feta Cheese Dip)
Htipiti (or tirokafteri or tyrokafteri or tyrokavteri) is a Greek style whipped feta cheese and roasted red pepper dip or spread and with game season on I just had to whip up a batch! At it's base this dip typically consists of feta, roasted red peppers, hot peppers, olive oil, lemon juice and garlic and it is all pureed or whipped into a dip. In this version I use use a roasted jalapeno pepper (which I roast at the same time that I make the roasted red peppers) as the hot pepper and I like to add some sun-dried tomatoes for an extra kick of flavour. I tend to serve this greek roasted red pepper and feta dip with toasted pita chips but veggies are also great for scooping!

Caramel Pumpkin Cheesecake Dip

With all of the pumpkin recipes these days I could not help but think of one of my favourites, this caramel pumpkin cheesecake dip! Yes, that's right, all of the flavours of a caramel pumpkin cheesecake in the form of a dip that literally only takes 10 minutes to make! Cheesecake has to be one of these best desserts around and it only gets better when you add the flavours of pumpkin pie but lets face it, a nice cheesecake takes a bit of time and effort to make, and this dip takes almost no effort so you can whip it up on demand whether for last minute guests or just for yourself for some late night comfort cravings! When I make a pumpkin pie or a pumpkin pie cheesecake I like to use a gingersnap crumb crust because the ginger flavour goes so well with pumpkin so when I make this dip I add that gingersnap flavour either by using the ginger snap cookies for dipping or just crumbling them on top! If you're looking for a snack or appetizer for halloween or Thanksgiving, or for any time for that matter, you really can't go wrong with this caramel pumpkin cheesecake dip!

Avocado Tzatziki Sauce

Avocado Tzatziki Sauce
I recently made some tzatziki sauce and while I was enjoying it I thought, wouldn't it be even better, even creamier with avocado? With that thought I just had to grab some avocados and add them to the tzatziki (which is a cucumber and yogurt salad or condiment that also typically includes garlic, lemon juice and fresh herbs) thereby creating avocado tzatziki! It may just be the avocado addict in me but the avocado tzatziki is so much better than the original and just look at that gorgeous green colour! This cool and creamy avocado tzatziki is the perfect side or condiment on a hot summer day!

Tzatziki Sauce (Greek Cucumber Salad)

Tzatziki Sauce

Tzatziki is a Greek meze or appetizer that is made from strained yogurt, cucumber and garlic. Optional ingredients include herbs such as dill, mint and/or parsley and lemon juice is also common. If you are feeling daring you can even hit it up with a splash of ouzo. In addition to being served as an appetizer it makes a great dip or condiment especially when served in gyros or with souvlaki.

French Onion Soup Dip

With the big game coming up I have been going over my parties menu and reviewing my favourite recipes including the hot caramelized onion dip which I wanted to add but I thought I would do something a little different this time. Although I am totally addicted to hot melted cheese dips, I wanted some variety so I decided to do a room temperature version inspired by the flavours of French onion soup. At the base of French onion soup is of course the caramelized onions and that means spending some time caramelizing the onions. To slowly caramelize the onions at a low temperature can take more than 3 hours but you can also do it at a higher temperature but it requires more hands on time as you have to stir the onions every couple of minutes. When you caramelize the onions at a higher temperature brown bits build up on the bottom of you pan and since you do not want them to burn it is a good idea to deglaze the pan frequently. Though I normally just use water to deglaze the pan this time I used wine and beef stock since they form the broth of French onion soup. Up next is a bit of garlic and thyme to finish off the onions. The base of the dip is made with sour cream and mayonnaise with a hit of lemon juice, Worcestershire sauce and gruyere for flavour. French onion soup is typically topped with toast, covered in cheese and then baked until the cheese is all melted and good and I incorporated that aspect into the French onion soup dip by serving it with crostini covered in melted gruyere.

Breakfast Queso Fundido

Breakfast Queso Fundido

While I was looking into queso fundido for my chorizo queso fundido I came across an idea that nearly floored me, a breakfast queso fundido! Yes, that's right, a hot melted cheese dip for breakfast! I hardly needed an excuse to make it! What makes this a breakfast queso fundido is that it is full of chorizo sausage and scrambled eggs which would make for a great breakfast all by themselves let alone in a hot melted cheese dip! In addition to the chorizo, scrambled eggs and cheese this queso fundido is filled out with some onions, garlic, tomato and a jalapeno for some extra heat! I have to admit that I was a little bit concerned about how scrambled eggs would work in a dip like this but they were a natural fit and they made for one amazingly tasty breakfast! This breakfast queso fundido would be the perfect way to start off the big game day right!

Let them have hot melted cheese dip for breakfast!

Roasted Cauliflower and Aged White Cheddar Dip

I have really been into cauliflower lately and in particular I have been enjoying a lot of bowls of the roasted cauliflower and aged white cheddar soup which have been keeping me warm on these cold winter days. With the big game coming up I have had snacks on my mind a lot and one of my favourite snacks for for any kind of party has to be hot melted cheese dips like the spinach and artichoke dip. The other day while I was enjoying a bowl of the roasted cauliflower and aged white cheddar soup I was thinking about dips and I had a crazy idea, why not combine the two ideas and make a hot melted cheesy cauliflower dip? The recipe for the dip is pretty easy, you just need to roast the cauliflower, puree it, mix in the cheese and then bake it until the cheese is all melted, bubbling and golden brown. I have to say that this dip is another reason to love cauliflower!
